The benefits and harms of Jerusalem artichoke for diabetes mellitus - recipes

Jerusalem artichoke, or earthen pear, is a perennial plant that looks like a sunflower. The beneficial properties determine its use in diabetes mellitus and a number of other serious pathological conditions. However, in order to know how to use Jerusalem artichoke for diabetes, and whether this is acceptable, it is strongly recommended to consult a specialist.

How does Jerusalem artichoke work for type 2 diabetes?

The use of Jerusalem artichoke for diabetes mellitus is justified due to the presence of a special polysaccharide, namely inulin. The presented component, penetrating into the stomach area, will be broken down to form a carbohydrate, namely fructose. As you know, it is subsequently absorbed into the blood, affecting sugar levels.

Fructose from the blood passes through cell membranes without problems and saturates the human body with the required amount of energy. In general, the ability of fructose to replace glucose in metabolic and energy processes is extremely important when faced with type 1 diabetes. But this is no less important for the second type of disease, when it comes to insulin deficiency. In this regard, experts draw attention to the fact that the treatment of diabetes mellitus is facilitated by the following:

  • in type 2 diabetes (without insulin deficiency), we are talking about a significant decrease in the degree of glucose absorption in the intestinal area;
  • due to this, a decrease in blood sugar levels is naturally formed, due to the simultaneous influence of inulin and fiber;
  • with a stable and continuous decrease in glucose, experts pay attention to restoring the degree of tissue susceptibility;
  • Another effect should be considered an improvement in the ability of pancreatic cells to independently produce insulin.

Thus, Jerusalem artichoke is recommended for use in diabetes mellitus type 2 and 1 due to the indicated characteristics. However, in order for the earthen pear to be as useful as possible, it is important to become familiar with some other features, namely the composition of the plant. It also fully explains why Jerusalem artichoke is characterized by the existing glycemic indices.

Features of the chemical composition

The chemical composition of the earthen pear is rich in vitamins, micro- and macroelements , while it has a low calorie content.
What exactly attracts patients with diabetes mellitus in its composition? First of all, it contains no sugar. Jerusalem artichoke is not capable of causing a jump in the blood. On the contrary, due to the fact that the sun root contains inulin (80%), the use of this product reduces its level. Ground pear has the lowest glycemic index - 13-15. GI depends on how quickly carbohydrates are absorbed by the body and converted into glucose.

Jerusalem artichoke performs the most important function for the patient's body. The inulin and fiber it contains delay the entry of glucose into the blood. Thanks to this, its level practically does not change. The high content of vitamin A in the earthen pear has a beneficial effect on the vision of diabetics, which begins to decline rapidly over time.

Composition and beneficial properties

Before learning how to prepare Jerusalem artichoke for diabetics, it is advisable to familiarize yourself with the list of components in more detail. Of course, it is not recommended to do this on your own; it is best to seek the support of a specialist. First of all, you need to pay attention to proteins and the presence in them of a significant amount of essential amino acids. Jerusalem artichoke dishes for diabetics in the process of getting rid of diabetes can also be consumed because the earthen pear promotes the correct functioning of the digestive system. At the same time, the absorption of toxic substances from the intestinal area is reduced, which affects the acceleration of their elimination.

Cooking celery for diabetes

It is recommended to use a plant such as Jerusalem artichoke for diabetes due to the presence of vitamins and microelements in it . For example, you should pay attention to carotene (provitamin A). The properties of Jerusalem artichoke in this case are reduced to improving the ability of the retina to perceive light. We should also not forget about improving the condition of all cells in the body. The benefits of Jerusalem artichoke are as follows:

  • vitamins B1, B2 and C are valuable because they make it possible to regulate metabolic processes throughout the body;
  • potassium ions are most actively involved in the degree of contractility of myocardial cells;
  • silicon is literally indispensable for various tissues of the body: cartilage, bone and connective tissue;
  • iron, as is known, is included in the composition of hemoglobin, and therefore takes part in the transfer of oxygen from the lung area to the tissues.

All the vitamins presented are almost completely preserved in the plant when it is cooked. Of course, they are also contained in raw form, but further I would like to talk about the use and benefits of the leaves, based on the glycemic index and other significant data.

Rich composition of root vegetables

Jerusalem artichoke has several names: tuberous sunflower, earthen pear, Chinese potato, Jerusalem artichoke. In Russia, two varieties of plants are cultivated, with about three hundred relatives growing in different parts of the planet. The edible part of Jerusalem artichoke is the tubers attached to the rhizome. Ground pear meets all dietary requirements for foods for diabetics.

It has a low energy value - 61 kcal, and is rich in complex carbohydrates, fiber, vitamins and minerals. According to the GI (glycemic index) table, Jerusalem artichoke is indexed with the number 15. Jerusalem artichoke contains:

  • Ash, which has a beneficial effect on hematopoiesis and wound regeneration.
  • Essential amino acids that the body needs but cannot produce on its own (arginine, threonine, valine, lysine, leicine, etc.).
  • Unsaturated omega fatty acids that accelerate metabolism and suppress appetite (oleic, linoleic, linolenic, stearidonic, gadoleic, arachidonic).
  • Saturated fatty acids for the formation of cell membranes, and proper absorption of vitamins and minerals (palmitic, stearic, etc.).
  • Phytosterol to eliminate hypercholesterolemia.

The vitamin and mineral composition is:

  • B-group vitamins: B1, B2, B3, B4, B6, B9, B12.
  • Other vitamins: C, E, D, PP, K and rare vitamin U.
  • Macroelements: potassium, calcium, magnesium, sodium, silicon, phosphorus, chlorine, sulfur.
  • Microelements: zinc, chromium, nickel, selenium, cobalt, copper, manganese, iron, boron, etc.

The content of BJU (proteins, fats, carbohydrates) is distributed per 100 grams as 2.1 g, 0.1 g, 12.8 g. respectively.

The carbohydrate component of the root vegetable is of particular value for diabetes mellitus. Most carbohydrates are polysaccharides, which are absorbed slowly, preventing blood sugar levels from rising sharply. These include fiber, which regulates digestion, starch, which helps restore the body, pectin, which normalizes metabolism, and inulin (a natural prebiotic), which improves the utilization of glucose and reduces the concentration of glucose in the blood. Inulin is not processed under the influence of enzymes, so its benefits are retained in full.

Jerusalem artichoke leaves

In the fight against diabetes mellitus, periodic use and consumption of the leafy part is acceptable. Without touching on various recipes, it is strongly recommended to pay attention to accelerating the wound healing process. As you know, diabetes mellitus and damage to the limbs and skin are common problems. That is why any means that can speed up regeneration processes should be used by a diabetic. However, it is important to consider that the most effective titles in this regard are those that are fresh.

Talking further about the benefits of Jerusalem artichoke and its leaves, we should not forget about the rejuvenation of the skin and the positive effect on metabolic processes. This is directly related to the optimal glycemic index, which will not be significantly higher in juice, syrup and other dishes. In general, the use of earthen pear leaves can be done independently. However, it would be best to discuss this with a specialist, like all recipes for preparing Jerusalem artichoke for diabetes.

Benefits and harms

Medicinal properties

Treatment of diabetes mellitus with Jerusalem artichoke is based on the action of inulin. It lowers blood glucose levels, which alleviates symptoms:

  • the urge to urinate becomes less frequent;
  • thirst decreases;
  • weakness and lethargy are replaced by vigor and increased performance;
  • hunger becomes manageable;
  • weight is normalized, and in both directions: if there was a shortage, weight gain occurs; if excess - weight loss;
  • dryness of the skin and mucous membranes is eliminated;
  • muscle weakness and spasms gradually go away;
  • the risk of vision problems, which are usually diagnosed during a long course of the disease, is reduced.

Experts note that Jerusalem artichoke is highly effective as an adjuvant in the treatment of not only diabetes, but also metabolic syndrome.

Beneficial features

Diabetes mellitus is a disease that is accompanied by various ailments and pathologies, since a lack of insulin and an excess of sugar in the blood disrupt the functioning of many organs. Therefore, it would be useful for people suffering from it to find out what else Jerusalem artichoke is good for in terms of health and what problems it can solve along the way:

  • cleanses the body of toxins;
  • reduces the level of bad cholesterol;
  • breaks down fats, promoting weight loss and being one of the best (61 kcal per 100 g, GI = 15 units);
  • improves digestion, restoring the natural microbiocenosis of the gastrointestinal tract;
  • promotes better absorption of vitamins;
  • strengthens the immune system;
  • has antitumor, diuretic, laxative, vasodilating properties;
  • helps improve well-being with tachycardia, anemia, varicose veins, ulcers, dysbacteriosis, gout, neurosis, dermatosis, osteochondrosis.

Ground pear is good for health, not only because of inulin. It also has a high silicon content, which:

  • improves brain activity, in particular has a positive effect on the pituitary gland;
  • normalizes the functioning of the thyroid gland;
  • reduces the risk of heart disease;
  • Helps the kidneys function without problems.

It is believed that the uniqueness of this plant is also in the fact that its roots are able to filter the substances that they absorb from the soil. This means that, no matter in what ecologically unfavorable area it grows, pesticides, radionuclides, nitrates, and heavy metal salts that poison the earth are not found in its parts.

Some sources dispute this point of view and put forward the exact opposite: the earthen pear is a plant filter that absorbs a maximum of toxins. However, even if this is so, you should not be afraid of this: inulin has the property of binding toxic substances, and in this form they are not at all dangerous to the body.

What's the harm?

People suffering from diabetes should be aware of the possible harm of Jerusalem artichoke if consumed regularly.

This is especially important for them, since any deviation in health is fraught with serious problems.

Firstly, it causes increased gas formation. You need to be prepared for this. Secondly, it can enhance already poor blood clotting. Thirdly, it often causes stones in the body to move. This is fraught not only with severe pain, blockage of ducts and canals, but also with their rupture, which can be fatal.

About the name. The vegetable got its name from the province of the same name (the Tupinamba tribe lived on its territory) in North America, which is considered the birthplace of this cultivated plant.

How to use?

Experts point out that taking Jerusalem artichoke with high or low sugar is necessary, depending on the characteristics of the body. In general, the following algorithm is optimal: two medium-sized tubers are used no more than two or three times a day. This should be done approximately 15 minutes before eating. In addition, you can use various recipes. We are talking about preparing salad, juice, syrup and some other items.

Can radishes harm the body of a diabetic?

In order for the benefits and harms of each of these types of dishes to be clear, it is strongly recommended that you familiarize yourself with the cooking features.

Apple jam

Apple jam, like any other, is best prepared using sorbitol or xylitol (or a combination thereof) in a one-to-one ratio, and the fruits themselves must be firm and slightly sour. Before cooking, apples must be thoroughly washed, peeled, and then cut into thin equal slices. The further process looks like this:

  1. thick syrup is boiled at the rate of one kg of sugar substitute per one kg of fruit;
  2. two-thirds of a glass of water is poured into the syrup, after which the pan is brought to a boil;
  3. then the apples are carefully poured in, and the whole brew is stirred until the fruit slices become discolored;
  4. You can check the readiness of the jam by the concentration of the syrup or by the apples, which should not float to the surface of the syrup;
  5. at the end of cooking, you can add a little cinnamon, lemon zest or vanilla to the sugar-free jam for the winter for taste.

Recipes for making ice cream for diabetics at home

An alternative recipe suggests making apple jam with stevia instead of sorbitol, a natural plant whose dried leaves have a fairly pronounced sweet taste. So, chopped and peeled apples should be squeezed into a saucepan, then add 1/4 tsp. cinnamon, three tsp. stevia concentrate and 70 ml lemon juice. Sugar-free apple jam should be brought to a boil, stirring all the time, and then immediately add 200 grams. pectin and boil for another minute or two. After removing from the stove, you need to rid the sugar-free jam for diabetics from the foam, which should then be poured into sterile jars.

Jerusalem artichoke salad and its preparation

When talking about recipes with Jerusalem artichoke, first of all it is necessary to note the preparation associated with the salad. It should be noted that:

  1. when combining all products, the glycemic index indicators should remain optimal;
  2. Peel and grate one apple and several Jerusalem artichoke tubers. It is optimal to use no more than one or two;
  3. The apple can be chopped, but it is advisable to do this as finely as possible;
  4. water the mixture with one tsp. lemon juice, then sprinkled with fresh herbs, which is useful for diabetes of any type and helps in treatment.

It would be best to season such a salad with linseed oil. If desired and it is permissible to consume the dish in this form, fresh carrots and a boiled egg are used. Next, I would like to talk about Jerusalem artichoke syrups for diabetes and juice, which may well be useful for the treatment of this disease, just like salads with pears.

Options for preparing vegetables with high sugar

The healthiest option for diabetes is to eat the vegetable raw. The taste of raw and prepared Jerusalem artichoke is significantly different. In the first case, it looks like everyone’s favorite cabbage stalk in childhood, and in the second, it looks like a sweet potato. You need to eat 50-70 grams of plant tubers per day. For convenience, you can prepare a Jerusalem artichoke salad by grating it and seasoning it with a small amount of vegetable oil. In addition to the tubers of the vegetable, the young leaves of the plant are also eaten raw. We wash them under water, chop them finely, add cucumber, carrots and other vegetables to taste, and season with vegetable oil.

Jerusalem artichoke leaves

Boiled Jerusalem artichoke takes second place. Peel and wash the root vegetables, cover them with salted water and cook until tender. We eat it like boiled potatoes, with a small piece of butter or a spoonful of vegetable oil and herbs.

Everyone is used to fermenting cabbage, now try doing it with Jerusalem artichoke. Cut the washed and peeled tubers into thin slices, place them tightly in layers in a glass container and fill with cold brine (two tablespoons of salt per liter of water). After this, put the mixture under pressure and send it to a warm place for a couple of days, and then to a cool place for another two weeks. We add the finished slices to salads or use them as a side dish. Once a week it is not forbidden to cook fried Jerusalem artichoke. We peel the tubers, pour boiling water over them and cut them into arbitrary shapes. Fry the chopped vegetables in vegetable oil until fully cooked.

Other recipes for diabetics

It is not so much the Jerusalem artichoke syrup that deserves special attention, but the infusion. Its preparation involves using three to four tablespoons of this fruit and one liter of boiling water. After about three hours, we can say that the infusion is completely ready for use. Take it throughout the day instead of water so that all the necessary vitamins enter the body.

Another recipe worth considering is a drink that is similar to coffee. Before learning everything about its use, it is strongly recommended to pay attention to the following:

  1. This healthy drink is prepared very simply: at the initial stage, one medium-sized fruit is cut. It is best that these are small pieces;
  2. the fruits will need to be poured for a few minutes, then removed from the water and dried thoroughly;
  3. then the earthen pear is fried in a frying pan without the use of oil;
  4. the resulting raw material will need to be passed through a regular coffee grinder.

Should raw, boiled carrots or carrot juice be included in a diabetic's diet?

An already prepared product is used according to an algorithm that coincides with the preparation of ordinary coffee. In order for all the beneficial components to be preserved in the Jerusalem artichoke prepared in this way, it is strongly recommended to use a fresh name. Speaking about syrup and its use for any type of diabetes, pay attention to the fact that this must be discussed with a specialist.

Adding to Vitamin and Winter Joy salads

If type 1 diabetes is considered incurable, then with type 2 diabetes you can fight to return to normal health. Often the second type of disease goes into remission with proper nutrition and exercise. The list of healthy foods cannot fail to include Jerusalem artichoke, which can be used within reasonable limits for all types of diabetes. The healthiest Jerusalem artichoke dishes for diabetics are fresh salads. This way, the maximum amount of healing substances is preserved in the vegetable, which means that the benefits of Jerusalem artichoke are much higher than with heat treatment.

Jerusalem artichoke salad

A simple and at the same time incredibly healthy salad would be “Vitamin”. It can include any vegetables you like. As a base, it is recommended to use two peeled Jerusalem artichoke tubers, a fresh cucumber, a couple of radishes and greens. It is best to grate the main ingredient on a fine grater, and the remaining components are at your discretion. I would like to note that raw Jerusalem artichoke has no taste, so it will not add sophistication to your salad. Its presence in the salad will be solely for medicinal purposes. To prevent the Jerusalem artichoke from darkening, it is recommended to sprinkle lemon juice on top. Use olive oil as a dressing.

A salad with Jerusalem artichoke and sauerkraut can also be called a fortified dish. To prepare it, peel a couple of tubers of the main ingredient and grate them on a coarse grater. We do the same with an apple. Add 200 g of sauerkraut to the resulting mixture and season the mixture with vegetable oil. During the cold season, “Winter Joy” will be a good alternative to summer salads. In addition to 70 g of Jerusalem artichoke tubers, you will need one large carrot, pickled cucumber and herbs. Grate the main ingredient and carrots on a coarse grater, cut the cucumber into thin strips and finely chop the greens. Mix all ingredients and season with any natural vegetable oil.

Additional information about use

In order for earthen pear to be effective for diabetes of any type, it is necessary to take into account additional features of its use. As noted earlier, it can easily be subjected to heat treatment and does not lose its useful characteristics. Speaking directly about cooking methods, they pay attention to baking, frying, boiling and even canning.

The use of root vegetables in the daily diet is beneficial because it does not in any way affect the overall glycemic indices . Naturally, this is relevant provided that it is used periodically and correctly. In addition, the presented variety is useful in its ability to eliminate the development of complications. This applies in particular to the cardiovascular system, visual organs and limbs. In the process of getting to know all the properties of Jerusalem artichoke, you should never forget about contraindications, which is important when faced with any type of illness.

Strawberry jam

Sugar-free strawberry jam is another interesting recipe, because strawberry jam with fructose retains all its beneficial qualities while maintaining the permitted glucose concentration. It is easy enough to prepare that you can stock it at home for the whole winter. First of all, you will need to prepare:

  • one kg of strawberries;
  • 650 gr. fructose;
  • two tbsp. water.

The berries must be sorted out to remove wrinkled and rotten ones, then remove the stems from them, rinse under running water and dry in a colander. It is important that the strawberries are ripe, but not overripe, otherwise the jars will open after twisting. The next step is to prepare a syrup from fructose and water, which you then need to bring to a boil in a saucepan. Having placed the berries in a container, wait until it boils again, then turn off the heat and prepare the future jam with fructose from strawberries for another six minutes. You shouldn’t keep the pan on the fire longer, otherwise the fructose will begin to break down and lose its sweetness.

When the strawberry jam with fructose is ready, remove the pan from the stove, cool it a little and pour everything into dry and clean jars. Before rolling, the jars must be sterilized in a large container over low heat. You can diversify the taste of jam with the help of natural additives - vanilla, mint or a slice of lemon.

Restrictions for diabetics

When noting the characteristics of any product, it makes sense to talk not only about its benefits, but also about its harm. Indeed, in some cases, diabetics simply do not cook Jerusalem artichoke, because it is unacceptable. Speaking about this, pay attention to the presence of an allergic reaction to any of the components of the presented root vegetable. Another limitation should be considered diseases of the digestive system that are at an acute stage. In this case, it is generally recommended to limit yourself to using the most dietary products possible.

Thus, it is necessary to understand that the use of Jerusalem artichoke, or earthen pear, by diabetics is acceptable. This can be done not only fresh, but also as part of various recipes. However, in order not to aggravate the recovery course by using the root vegetable, it makes sense to familiarize yourself with all the contraindications and, no less important, the norms for the use of the root vegetable. For example, you can learn everything about how exactly a diabetic uses Jerusalem artichoke from a diabetologist or endocrinologist.

Gooseberry jam without sugar

For diabetics, a jam recipe can be made in such a way that it contains no sweeteners at all - neither beneficial nor harmful, and it will be prepared without any syrup. For example, sugar-free gooseberry jam is very simple to prepare: you need to wash an arbitrary number of berries and dry them at room temperature, and, if possible, remove all the stems. Having transferred the gooseberries into an enamel container, they are heated together with water over low heat at the rate of one kg of berries per half a glass of water. As soon as the gooseberries begin to release juice, the pan must be removed from the heat and the jars prepared according to all the rules should be filled with berries.

The cooking process is not yet complete: the jars must be pasteurized for 20–25 minutes at a temperature of 90 degrees, and only after that they can be rolled up and stored in a dark room. Another recipe suggests combining gooseberries with their closest relatives - black and red currants. According to the procedure, you need to proceed as follows:

  1. sort the berries from spoiled ones, rinse and dry;
  2. all ingredients must be blanched in boiling water - currants for three minutes and gooseberries for five minutes (separately);
  3. after blanching, all berries are immediately cooled in boiled water, which should then drain from them.;
  4. currants and gooseberries in arbitrary proportions are placed in jars, which need to be covered with lids and placed in a large saucepan with boiling water for 9–11 minutes for sterilization;
  5. At the end of the process, the jars are twisted and, upside down, put away for a day in a dark and warm place.
