Honey mushrooms are perfect for this purpose. They can be collected in the forest in the autumn, or purchased in a store.
To preserve all the qualities and appearance of mushrooms, it is important to process them correctly. How to freeze honey mushrooms for the winter?
Honey mushrooms: selection rules, preparation
As already mentioned, honey mushrooms are considered the best type of mushrooms for freezing. They are dense in consistency, therefore, they will not lose their shape after defrosting. Another advantage is that they absorb little moisture.
Only whole mushrooms, without rotten parts, are suitable for freezing. In terms of size, it is best to choose medium. Fresh honey mushrooms purchased in the store do not need to be washed in water before freezing.
For collected mushrooms in the forest, there are several rules:
- Before collecting them, you need to carefully rake the foliage with your hands, and only then start cutting off a few mushrooms at a time. Remember that honey mushrooms grow in families.
- Save time on processing at home. After cutting, immediately clean off all contaminants and place them in a basket with the cap down.
- It is important to pay attention to the size. They should be small - medium. Large honey mushrooms are difficult to freeze.
Mushrooms can be stored frozen for no more than 6 months. Otherwise, the taste and aroma of ready-made honey mushrooms may not be noticeable.
The process of processing and preparing honey mushrooms is labor-intensive:
- First of all, we sort through and remove the spoiled and wormy ones.
- Mushrooms must be whole. We sort by size for more convenient and quick freezing.
- Small ones are used whole, and large ones are cut. It is for this reason that it is important that the honey mushrooms are of the same average size.
- Place in a colander and rinse under running water. Leave until the water has completely drained.

How to prepare mushrooms for freezing
Honey mushrooms grow in families, and in one place you can collect a decent amount of mushrooms. Mushrooms should be cut a few at a time, at a short distance from the ground, so as not to touch the earthen lump. It is better to clear mushrooms of debris immediately upon collection.
At home, honey mushrooms need to be sorted and sorted first. Only fresh, strong mushrooms without signs of damage are suitable for freezing. Mushrooms are also sorted by size. Small ones are frozen whole, and large ones are cut into several pieces.
Next, the mushrooms need to be washed to remove various debris and small insects.

Freezing raw mushrooms
Not everyone knows that freshly picked honey mushrooms are usually frozen raw and whole.
Subject to deep freezing, mushrooms do not change their appearance. They can be added to stews, fried, or cooked into a delicious, aromatic soup. They are prepared in the same way as freshly picked ones.
You should not rinse them under water, as excess moisture during defrosting will make them watery and not so tasty.
If the mushrooms are very dirty, then in this case it is recommended to wipe them with a damp towel.
If you cannot do without rinsing under running water, then place the honey mushrooms on a dry baking sheet and wait until all the excess moisture has evaporated. Instead of a baking sheet, you can use a dry, clean towel.
Place dry mushrooms in one thin layer on a clean, dry food tray, place in the freezer and freeze. Afterwards we pour the prepared honey mushrooms into a plastic bag and put it back.

Boiled honey mushrooms, rules for freezing
It is very simple to boil honey mushrooms for freezing, but it is worth remembering that the appearance of boiled mushrooms will not be presentable. They are mainly used for preparing first courses and appetizers (for example, caviar).

- After the time has passed, strain, place on a towel and wait until they cool completely.
- Portion into small plastic bags and place in the freezer.

Processing of autumn mushrooms
Among mushroom pickers, autumn honey mushrooms are very popular because they have an amazing taste and aroma. How the mushrooms will be prepared in the future will determine how the autumn mushrooms will be processed. In this case, the same processes mentioned above are applied to this type of fruiting body.
It is worth noting that the processing of honey mushrooms and the processing time for each type are practically the same. The pre-cleaning time for these fruiting bodies varies from several hours to a day. If the mushroom harvest is large, then it should be divided into several parts so that processing is not so burdensome. Those honey mushrooms that you want to keep are best taken to a cool room and laid out on paper. If it is cool outside, then honey mushrooms can be placed in a well-ventilated area and left there overnight. However, experts still advise dealing with mushrooms immediately after they are brought home. This will help avoid possible poisoning from spoiled copies.
If honey mushrooms are collected from dead wood, then it is better not to pull them out, but to cut them with a stainless steel knife so that the cut does not darken. Having brought home a mushroom harvest, you will not have to remove the remains of the mycelium contaminated with dust and soil, and processing honey mushrooms will not be so difficult and time-consuming. These fruiting bodies are actually considered one of the easiest mushrooms to clean because they do not require scraping. And if you follow the advice and first clean them in the forest, then processing honey mushrooms before cooking will bring more positive emotions.

The caps of mushrooms are much more nutritious and meatier than the legs, although the legs also have their own beneficial vitamins and microelements. However, many mushroom pickers, if they find a large area occupied by honey mushrooms, collect only the caps. Then they don't have to spend a lot of time cleaning mushrooms after returning home. In addition, this method does not harm the mycelium, so next year you can safely return here to harvest a new harvest.
Many novice mushroom pickers are concerned with the question: how is honey mushrooms processed after harvesting if overgrown specimens are encountered? Let us note right away that overgrown and old specimens are always distinguished by flabby, softness and stale aroma. Therefore, it is better not to risk your health and throw away such fruiting bodies. However, if the old honey mushrooms have an attractive appearance and a good smell, you can leave them without any problems. Processing honey mushrooms in this case will largely depend on what you want to cook from them. Many people call mushroom caviar or pate the best option for old honey mushrooms.
The question of how to freeze honey mushrooms for the winter in the refrigerator is asked by many mushroom pickers. These mushrooms have a special taste, but you want to cook dishes from them not only during the “quiet hunting” season, but also in winter. Frozen honey mushrooms are an excellent ingredient for soups, stewed potatoes, mushroom pies, various salads and snacks. You just need to properly prepare the mushrooms before freezing and store them correctly.
Classic recipes
One of the simplest and most delicious recipes for pickled mushrooms is the classic pickling option. To prepare this preservation you will need the following components:
- 2 kg of fresh honey mushrooms (they must be boiled first);
- 15 ml vinegar (9%);
- 50 grams of salt and sugar;
- 5 glasses of water;
- 2 bay leaves;
- 5 pieces each of black peppercorns and cloves.
Marinade with oil
The taste of mushrooms pickled in a marinade with butter is no less interesting, but you should be careful when eating them, because the appetizer turns out to be quite high in calories. From the quantity of products indicated in the recipe, you get 4 half-liter jars of honey mushrooms.
To prepare the snack you will need:
- 2 kg of fresh mushrooms, which are pre-boiled;
- 700 ml sunflower oil (it is better to take unscented oil or replace it with olive oil if desired);
- 1 liter of water;
- 1 hot pepper;
- one and a half teaspoons of 70 percent vinegar essence;
- 2 cloves of garlic;
- 10 peppercorns;
- 3 tablespoons each of salt and sugar;
- 5 pieces each of cloves and bay leaves.
Pour all the ingredients into a saucepan with water, except vinegar essence, oil, mushrooms and hot peppers. The marinade is brought to a boil and then cooked for another 5 minutes. Now vegetable oil is added to it, the mixture is boiled for 10 minutes.
While the marinade is being prepared, you need to scald the hot peppers with boiling water twice. It and the garlic need to be cut and placed in sterilized jars. After this, boiled mushrooms are placed in the container up to the neck and vinegar essence is poured in. At the end, the jars should be filled to the top with boiling marinade and closed.
Option with garlic
For a piquant taste, you can add garlic to the appetizer, which will make it not only more interesting, but also healthy. To use this recipe for pickling honey mushrooms, you will need the following products:
- 1 kg of mushrooms (fresh);
- liter of water (it is better to take filtered or boiled);
- a pair of bay leaves;
- 5 large cloves of garlic;
- 35−40 grams of salt;
- 10 peas of allspice;
- 2 tablespoons sugar;
- 6 pieces of cloves;
- teaspoon 70% vinegar essence.
Place all the spices except garlic in a container with water. After boiling, garlic, cut into small pieces, is added to the marinade, and the mixture is boiled for a couple more minutes. Now you need to put boiled honey mushrooms into the liquid and bring it to a boil again. The snack is placed in jars and rolled up.
Preparation with dill
One of the classic recipes for pickling honey mushrooms is marinade with dill. Thanks to this herb, the snack turns out to be very aromatic and acquires a taste worthy of a festive table.
To prepare such a preserve, you will need 2 kg of fresh mushrooms, a liter of filtered water, a dense bunch of green dill, 3 tablespoons of sugar and 5 allspice peas. In addition, you need 6 percent vinegar (100 ml) and 60 g of fine salt.
You need to boil water, pour sugar, salt and pepper into it. The liquid is left on low heat until the bulk ingredients dissolve. After this, you need to strain the marinade and add table vinegar and finely chopped dill to it. Now the mixture is brought to a boil again and left on the fire for 4 minutes.
Boiled honey mushrooms are distributed into sterilized jars and filled with hot marinade. At the same time, you need to make sure that a lot of dill gets into each container, because it is this that will give the mushrooms an interesting taste and aroma. The jars are immediately rolled up with lids.
It is better to eat a snack prepared according to this recipe only after a few weeks. Otherwise, you won’t be able to appreciate the real taste of such pickles.
Preservation without vinegar
Those who care about their health or for other reasons do not like vinegar in preservation should not refuse such pickles, because honey mushrooms can be pickled without this component. The appetizer turns out no less appetizing than other recipes. You can prepare it from the following set of products:
- 1 kg of fresh mushrooms;
- liter of water;
- dessert spoon of citric acid;
- a level tablespoon of salt;
- garlic to taste;
- a tablespoon of sugar;
- a pair of bay leaves;
- 2-3 clove umbrellas.
All components are added to cold water, except citric acid and honey mushrooms, after which it is brought to a boil. Now you need to throw lemons into it and bring it to a boil again. At this stage, you should taste the marinade to add salt or sweeten it to taste.
Boiled mushrooms are added to the brine and the container is left on the fire for another 15 minutes. Honey mushrooms with marinade are transferred to sterilized jars to the very top, and then rolled up with lids.
Freezing blanched mushrooms
You can freeze honey mushrooms not only fresh, but also treated with hot water.
To carry out blanching, you need to prepare 2 pans, a colander, a slotted spoon and paper towels. Cold water is poured into one of the containers, and a saline solution (20 g of salt per 1 liter of water) is poured into the other.
Following actions:
- Place the pan with brine on the fire and bring to a boil.
- Honey mushrooms are placed in a boiling saline solution. They are boiled in it for no longer than 3 minutes.
- Using a slotted spoon, the product is removed from the brine and placed in cold water (shock treatment).
- After the operation, the future preparation for the winter is laid out in a colander, allowing the water to drain completely.
- Dry the mushrooms on a paper towel, spreading them out in one layer.
To freeze honey mushrooms for the winter, the dried product is placed in plastic bags or in special containers for storing food. To properly freeze honey mushrooms, you need to divide the blanched mushrooms into small parts in order to use the created reserves if necessary.
Irina Selyutina (Biologist):
Experienced chefs are convinced that blanching of honey mushrooms, like other mushrooms, can be done if you plan to use them in the future for soups or mushroom caviar. For other recipes, in their opinion, including for frying, it is better not to blanch honey mushrooms - the shape of the mushrooms may be deformed.
You cannot defrost one large portion several times. After the second defrosting, the fruiting bodies will become soft and change shape and color.
Preparing for freezing: all stages
All collected or purchased mushrooms are carefully sorted. Only whole, healthy and moderately large samples are selected for freezing.
How to clean:
- Use a special stiff brush or knife to remove small debris.
- Cut off the bottom of the leg.
- Remove the skirts from mushrooms.
- Remove the films from the butter caps.
How to wash:
- If the mushrooms are too dirty, rinse them.
- And then dry thoroughly. Dry all parts with a paper towel to ensure no drips remain.
If you can avoid washing mushrooms, don’t! They become saturated with moisture and, after defrosting, lose a lot of flavor.
It is also impossible to soak the product for a long time; it is already watery and releases a lot of juice when cooked. After defrosting, this property worsens. That is why samples that are too wet are lightly boiled and squeezed.
How to boil before freezing:
- Cut everything into small convenient pieces, as if into a dish. Anyway, after defrosting, the product will be used in soup, pizza, etc. By the way, after defrosting, mushrooms are more difficult to cut, as they lose their shape and release a lot of moisture.
- Boil water in a saucepan.
- Place everything in boiling water and boil for 5-10 minutes. There is no need to cook longer to prevent the pieces from becoming rubbery.
- Place the finished mushrooms in a colander and shake, letting the water drain.
- The product must be freed from moisture as much as possible (you can even gently squeeze it out).
- Once the pieces have cooled completely, you can start freezing.
We recommend: How to properly store dry ice: selecting a suitable container and creating optimal conditions
Mushrooms can not only be boiled, but also fried:
- Cut the product into small pieces.
- Heat vegetable oil in a frying pan.
- Place the pieces in the oil and fry for 20 minutes, stirring constantly with a spatula.
- Drain off excess juice.
- Cool the mushrooms and place everything in the freezer in small portions.
Other pre-heat treatment methods:
- Steamer: Place food on a wire rack and steam for at least 5 minutes.
- Blanching: add a little salt to a saucepan of boiling water, put the mushrooms in there, let sit for 2-3 minutes, then transfer everything into ice water.
- Oven: Bake fresh mushrooms on a baking sheet with foil for about 20 minutes to get the most flavorful semi-finished product.
