They are carefully sorted before use. Lids covered with a rusty coating are rejected. Monitor the quality of the sealing rubber. If the gasket in the lid has yellowed and become sticky, the lid should not be used.

How to properly select sea buckthorn for freezing

Only ripe orange berries should be frozen. After harvesting, the fruits should not be kept for a long time, a maximum of 5–6 hours, so that they do not lose vitamins naturally. Prepare thoroughly for freezing:

  • the fruits are freed from large branches and leaves, poured into a deep bowl with water several times;
  • after each water change, the number of twigs, petioles and damaged fruits floating to the surface decreases;
  • then they sort more, extracting the crushed berries - they make tea or compote, grind them with sugar;
  • Whole selected fruits are taken out with a slotted spoon and laid out in a thin layer on a kitchen towel to dry for 20–30 minutes.

Drying sea buckthorn for the winter

To dry sea buckthorn fruits at home, the berries must be collected no earlier than the end of August, September, October, until the first frost. After frost, the skin of the berries often bursts and the fruits become difficult to collect for subsequent processing, although they do not lose their healing properties even after severe frosts. The berries are shaken from the tree onto a previously prepared clean cloth. Since the skin of sea buckthorn is very delicate, the berries should be washed very carefully under low pressure. Then the fruits are sorted, discarding the bad ones, and lightly dried in air until the water is completely dry. After this, the sea buckthorn should be placed in one layer on baking sheets and dried in the air. Drying sea buckthorn at home must be done in the shade to avoid destruction of the valuable carotene in the berries in the sun. Dry in the oven at 50ºC. The fruits should not burn.

The most appropriate way is to dry the cake at home. In this way, maximum use of the berries can be achieved: for juice and oil, and only then for seeds. Moreover, the dried cake has absolutely the same properties as whole, already dried berries. The cake is placed in small gauze bags and dried in the shade. Then the sea buckthorn berry cake is dried in the same way as the berries in the oven. The dried cake is scrolled in a meat grinder or ground in a coffee grinder along with the seeds and then used to prepare 80% sea buckthorn oil by adding vegetable oil and infusing for 3 weeks in triple extraction. To prepare the second and third extracts, the old cake is squeezed out and removed, and new cake is added to the resulting oil, repeating the infusion procedure. Then, the resulting oil is carefully filtered.

How to freeze sea buckthorn for the winter

There are several methods for freezing berries, including using modern household appliances. Refrigerators with blast freezing chambers allow you to preserve the structure of tissues and get rid of microbes. Freezers with fast freezing function process the product at -22 ºC. It is better to freeze fruits in small portions, so that the thawed product can be consumed immediately. Berries should not be repeatedly exposed to low temperatures, as beneficial substances are lost. You can prepare ready-made portions of fruits, ground with sugar, in small containers.

Shock freezing of sea buckthorn

This technology is more common in industry, but there are also household appliances that allow you to instantly reduce the temperature in a separate freezer to -30... -50 degrees. When frozen in a conventional chamber, large ice crystals form in the intercellular space of the fruit, breaking the cell walls. Thawed berries bleed juice and become flabby. Under conditions of shock freezing, tiny crystals are formed, the cell walls remain intact, and as a result the product looks like fresh. Blast freezing requires a rapid decrease in temperature starting from -25 ºC.

Freeze portions of sea buckthorn in containers or plastic bags

Prepare the container in which the frozen product will remain in advance. Purchase special small containers for the freezer or use small containers for dairy, culinary or confectionery products. The process of freezing whole Siberian pineapple fruits is carried out in two ways.

  1. Most freezers have a compartment with a shelf-tray for freezing fruits and vegetables. It is covered with parchment paper and the fruits are laid out in one layer. Frozen berries are then packaged in small portion containers or sealed bags.

  2. The fruits are immediately placed in selected containers or regular bags in pre-distributed small portions. Dry and clean containers or cups are not filled to the top and are not closed immediately, but after freezing.

Sea buckthorn frozen with sugar

A sweet semi-finished product is also prepared.

  1. The berries are rubbed through a sieve.
  2. Sugar is added to the finished puree to taste.
  3. They are packaged in convenient containers so that you can use the sweet jam in one day.

Two ways to freeze berries

Freezing sea buckthorn for the winter can be done in two ways. The first is to immediately distribute the dried berries into selected containers or bags and place the latter in the freezer. If plastic containers or cups serve as containers for frozen sea buckthorn, they are not immediately closed. First, the berries are given time to freeze, and after 2 days, when removed from the freezer, the containers are tightly closed with lids. Then the containers are returned.

If cellophane bags are used, the fruits are placed in them in a thin layer, the bag is tied and placed in the freezer in such a place so as not to shift or “disturb” the berries until the moment when they are needed.

Another way is to place the sea buckthorn on a tray in one layer. Place the tray in the freezer and turn on the deep freeze function. In this case, the berries will not freeze together, and after a couple of hours they can be taken out and poured into selected containers, and then returned to the freezer. Sea buckthorn frozen in this way can be easily scooped up in the required quantity, either from a bag or from a plastic container.

Thawed sea buckthorn tastes no different from fresh. Its berries can be used in exactly the same way as freshly picked ones!

How to properly defrost sea buckthorn before eating

It is worth taking care of defrosting before use. You need to plan when you will need vitamin products.

  1. It is better to defrost berries in the refrigerator, placing the bag on the top shelf. The advantages of this method are that the nutrients of sea buckthorn are preserved, and harmful microflora does not develop. The process is lengthy, takes up to 9 hours.
  2. At room temperature, sea buckthorn will defrost faster, but there is a danger of simultaneous growth of bacteria.
  3. It is not recommended to quickly defrost sea buckthorn in the microwave, since the technology destroys the cellular structure of the product.

What can you cook from frozen sea buckthorn?

Frozen berries contain most of all its beneficial components.

  • The fruits are consumed without any processing, with porridge or tea.
  • By combining with sugar, you get a high-calorie, but high-vitamin dessert - fresh jam.
  • Frozen berries or jam briquettes are used to prepare fruit drink, jelly or compote.
  • If sea buckthorn is taken for these purposes, it is not defrosted, but immediately placed in boiling water, adding sugar.
  • To fill the pies, defrost the sea buckthorn and keep it in a sieve for some time to allow the juice to drain.
  • They prepare jellies and sauces for pancakes, as well as for meat.
  • Sour berries are used when stuffing poultry for baking in the oven.

Rubbed with sugar

Sea buckthorn pureed with sugar is stored well without cooking, so it retains a maximum of vitamins and other useful substances. In addition, such “live” jam turns out to be very tasty. For the recipe, sea buckthorn and sugar are taken in a ratio of 1:1.5.

Clean dry berries are ground in a meat grinder or blender. You can leave the puree in this state or grind it through a sieve to obtain a homogeneous mass without skin and seeds. The first option is preferable in terms of benefits, since sea buckthorn peel and seeds contain very valuable substances that have the most pronounced therapeutic and prophylactic properties.

When using a meat grinder, sugar is added to the already crushed mass, and then allowed to brew and stirred periodically so that the crystals dissolve faster. If sea buckthorn is ground in a blender, it is better to first mix both components and then grind them together. This will ensure the sugar dissolves faster and eliminates the need for prolonged stirring to achieve the desired homogeneity.

The finished mass is laid out in sterilized jars. Pour 2 tbsp on top of each. l. sugar to minimize the risk of fermentation. Hermetically sealed. Store at a temperature not higher than +4⁰С.

Shelf life of frozen sea buckthorn

Packages and containers with frozen berries are laid out in sections for storage. It is advisable to keep them separate from meat and fish so that odors are not absorbed. Make sure that the containers are hermetically sealed and that no moisture is released: due to condensation, the chamber has to be defrosted more often. At normal freezer temperature, -18 ºC, sea buckthorn can be fully stored for 9 months. During this period, the valuable product needs to be used, otherwise it will not bring any benefit to the body later.
