Attention! Sea buckthorn berries are contraindicated for pathologies of the pancreas, inflammation of the gastrointestinal tract, disorders of the formation and outflow of bile. Therefore, before freezing, undergo a medical examination. Otherwise, the body can be seriously harmed.

Freezing is carried out according to the following scheme:

  • First you need to select good berries. Unripe fruits will taste very tart and sour, and in order to prepare a pleasant mixture (jam or medicinal composition), you will have to add a lot of sugar. Sugar is of little use. Therefore, it is better not to buy unripe berries. Without regret, throw away fruits that are moldy, rotten, damaged by insects, dry, with spots on the skin - their nutritional value is significantly reduced and they can spoil the rest of the supplies. Berries ideal for freezing are round, strong, without damage, light or bright orange, without plaque. You can make a compote from the crushed ones or add them to tea if you don’t mind throwing them away.
  • Clean the berries from leaves, twigs and other debris and rinse thoroughly. Pour clean water into a wide bowl, pour in the sea buckthorn and rinse the berries for several minutes, draining the dirty liquid and pouring in clean liquid. A stream from a tap can damage the berries, but the maximum that is allowed is a stream from a spray bottle. But it’s better to wash the berries with your hands, carefully picking them between your fingers.
  • The next stage is drying. Under no circumstances should wet berries be frozen: under the influence of cold, drops of water will turn into ice. The berries will freeze to each other, turning into an unappetizing lump, and it will be difficult to separate them. Spread on the table either a kitchen towel (preferably terry - it absorbs moisture well, and always clean - so that the berries do not absorb foreign odors) or paper napkins in 2-3 layers, scatter the sea buckthorn in one layer and wait half an hour or a little longer. If the berries do not come into contact with each other, they will dry quickly.
  • Do not rush to pour the dried berries into a bag and put them in the freezer: they may stick together. Scatter them on parchment and place them on a freezer tray for a while. If there is no tray, feel free to place it on trays or flat dishes. It will be enough to keep the berries for 30-40 minutes at a temperature of minus 22 degrees: this is the so-called quick freezing. It is more effective than slow (at minus 10-12), since it allows you to retain more nutrients, and in addition, it does not allow the berries to crack, thereby maintaining an attractive appearance.
  • After biding my time. remove the berries and place them in a container to freeze. Now the berries will definitely not stick to each other, and they can be easily removed from the container with a regular spoon. The container can be a plastic container with a lid, a ziplock bag, yogurt cups, or a regular plastic bag. The container is more convenient because its thick walls will protect the sea buckthorn from damage when it comes into contact with other products in the chamber. Be sure to let the air out of the plastic bag before tying it and putting it in the freezer.
  • It would be a good idea to write the freezing date (month and year) on the bag, since it has a limited shelf life: no more than 9 months at a temperature of minus 18 degrees.
