How to thicken condensed milk for filling?

If you like to pamper your family with baked goods, then you have often had to deal with the problem of condensed milk being too thin. In our age, you can forget about the milk in which the spoon was standing, because now everyone is trying to dilute it and mix something in.

So what can you do to prevent it from leaking, and how can you solve this problem when the whole family demands buns with this sweet product? Naturally, there is always a way out, especially for experienced and resourceful cooks who have long been successfully coping with this difficulty.

Useful recommendations Let's look into this issue together so that we are already aware of the little secrets of professional cooks. Here are the most common ones:

Semolina. Many people use this grandmother's method. This cereal can thicken any mixture well, especially condensed milk. Cooling. It’s trivial, but maybe just an ordinary refrigerator will help. Place the jar higher, but, of course, not in the freezer itself. The mixture will become viscous and thick very quickly. Oil. You shouldn’t expose it to high temperatures, it’s better to just soften it a little naturally and beat it thoroughly with condensed milk. Powdered milk. It’s surprising, but what a savvy housewife can’t come up with for her favorite dish. You can add baby formula instead of powdered milk. It will be able to thicken the liquid quite well. Cooking. This, of course, is not the same taste, but it is a completely necessary thick mass, which has its own unsurpassed taste advantages. Nuts. Add more lightly chopped walnuts. They will hold this liquid mass together. The crumbs left over from the cake layers will also work if you are baking a cake. Quality. The biggest guarantee of a product’s good consistency is its high quality. Buy condensed milk marked “GOST”; with it you are more likely to see what you expect. Syringe. If you are baking cakes or buns, use a syringe after removing the needle from it. Then there is a greater chance that the mass will not leak out during baking. We do not recommend adding flour to this delicious delicacy. It can ruin its spicy taste. If you still decide to take this step, simmer this mixture over low heat for about ten minutes.

Do you use expired food for cooking at home?

Yes, the main thing is to process it if it is meat or expired kefir for pancakes.

No, it is very dangerous and not useful.

Delicious cream recipe I would like to share a wonderful recipe using condensed milk as the main product. This could also be a way out of this situation.

Shelf life in different containers

The process of condensing milk with sugar takes place at 60 °C, which allows you to preserve most of the nutrients. The composition of whole cow's milk and condensed milk are slightly different, but in terms of nutritional value, the favorite delicacy of those with a sweet tooth is much superior to the original product.

This quality is especially valuable due to the ability to supply residents of the Far North with whole milk, which is worth its weight in gold. Unfortunately, the stock has to be rotated annually, because the shelf life of condensed milk does not exceed 12 months, subject to the storage conditions specified by the manufacturer.

The shelf life of condensed milk depends on the container in which it is packaged:

  • In a tin can, the delicacy is guaranteed to retain its beneficial qualities for one year.
  • Packages with doy-pack dispensers will retain the contents for several months (the specific period is indicated by the manufacturer).
  • The same is true with plastic containers with condensed milk. But there is one caveat: if the plastic container is packaged not at the factory, but in the store, the contents must be consumed within 5 days.

Plastic containers have a number of advantages over the usual tin can - light weight, convenient format and method of dispensing contents, unbreakable material. But the risk of purchasing a counterfeit product increases many times over. Carefully read the composition of the purchased product.

Additional ingredients (cocoa, coffee, chicory) do not affect the safety of condensed milk in a tin can; the shelf life will remain the same - 12 months.

Choosing condensed milk correctly

It doesn’t cost a careless manufacturer anything to falsify the date of manufacture or to pour inside a product that has nothing to do with real condensed milk.

Of course, low-quality contents can also be found in tin containers. Under the usual blue and white label on the can there may be canned milk containing milk. In addition to milk, such products contain vegetable fats, which significantly reduce the cost of production technology.

Most often, one should only blame one’s own carelessness for purchasing a counterfeit product. The following tips will help you choose a good quality product:

  • The label with real condensed milk bears GOST and the inscription “Whole condensed milk with sugar” (the set of words may be slightly different, for example, “Whole condensed milk with sugar” or “Skinned condensed milk with sugar”, “Partly skimmed condensed milk with sugar” ).
  • Canned milk products have various inscriptions on the packaging - “Condensed milk”, “Special milk”, “Condensed milk product with sugar”, etc. We have already mentioned the composition of canned milk products above.
  • The container must be airtight without chips, cracks, dents, deformation, leaks, signs of swelling and rust. The integrity of the packaging will protect the contents from infection by pathogenic microflora, and you from possible poisoning.
  • You can recognize real condensed milk by the solid stamped markings on the tin can. In the first row, the industry code M and several numbers must be indicated, among which you need to find the marking 76, indicating the absence of components in the product that are not provided for by GOST.
  • The second row of markings indicates the production date and shift number. To stock up on your favorite treat, purchase freshly prepared product.

GOST legalizes antioxidants (E300, E301, E303, etc.) and stabilizers (E331, E332, E339 and E340) in condensed milk.

How to properly store at home: place, conditions, timing

Although condensed milk has undergone a long pasteurization process, it should be stored correctly. Only compliance with storage conditions guarantees the quality of the contents. How long condensed milk can be stored is indicated on the packaging.

Optimal conditions for storing canned condensed milk:

  • temperature background from 0 to 20 °C;
  • relative humidity not higher than 85%.

Let's look at how to properly store canned milk before and after opening the package.

In a closed container

The optimal temperature for storing condensed milk can be achieved in the refrigerator or basement:

  • Do not place jars close to each other to avoid chipping and rust.
  • For basement storage, place the containers in a cardboard box.
  • If there is a special lubricant on them, do not wipe it off, it will protect the tin from corrosion. Wipe off the protective layer before opening the container.
  • Monitor the humidity level in the room and ensure good ventilation.

In an open container

The shelf life of condensed milk when opened does not depend on the packaging. After opening, the container should be stored in the refrigerator for no more than five days.

  • Be sure to close doypacks and plastic bottles to minimize the entry of microflora.
  • Pour the contents from a metal can into a glass jar with a nylon lid or a plastic container.

After opening, the metal quickly oxidizes, your favorite delicacy is saturated with oxidation products, which affects the taste and healthiness.

Can condensed milk be frozen?

For those with a sweet tooth, the likelihood of condensed milk deposits appearing in the refrigerator is very small, but what about those who use the delicacy only for culinary purposes or drink coffee with it from time to time?

Do-it-yourself condensed milk from goat milk

Another great option for making condensed milk. Of course, instead of goat's milk, you can use cow's milk. This is not important. The cooking process will be the same.

Ingredients:

  • Goat milk - 1 liter
  • Sugar - 300 gr

Cooking method:

1. Pour milk into the pan and immediately pour sugar into it. Place on maximum heat and bring to a boil. Be sure to stir constantly.

2. Then continue to cook over high heat for 25 minutes, stirring continuously. During this time, the milk will begin to thicken and decrease in volume by about 2 times.

3. After 25 minutes, remove the pan from the heat and leave to cool. Pour it into a jar for further storage and place it in the refrigerator.

Conditions and periods of storage of boiled condensed milk

Boiled condensed milk is also very popular. This product is especially good for preparing various desserts.

  • Regardless of whether you cooked it yourself or bought ready-made factory-made canned food, they are subject to the same storage conditions as for regular condensed milk.
  • Do not forget about the need to transfer the contents of cans after opening to a chemically inert container.

What to do if condensed milk is candied?

If the contents of an opened jar are candied, most likely you forgot about it and the expiration date has expired. This product must be discarded immediately.

If you bought condensed milk and found a candied mass, and the expiration date is still far away, there is a violation of storage conditions. It is worth noting that the manufacturer is no longer responsible for the quality of such a product.

Some housewives revive candied condensed milk by boiling it over low heat with the addition of milk or water. But it’s better not to eat such a product, but simply throw it away.

Now you know how long condensed milk can be stored in a tin can or other types of packaging, and how to choose a quality product. If the storage conditions are observed, the delicacy will not cause harm to health. Don’t forget to periodically inspect your pantry and promptly dispose of expired jars.

Can condensed milk be frozen? Should not be doing that. Violation of the temperature regime during storage leads to sugaring.

How long to store opened condensed milk

Condensed milk in an open can will be stored in the refrigerator for no more than 5 days. Before putting the condensed milk in the refrigerator, pour it into a glass jar and close it tightly with a plastic lid. This is necessary so that the oxidative reactions that are triggered when the metal comes into contact with air do not have time to affect the taste. In addition, a metal can cannot be hermetically sealed. The product will quickly become thick and begin to sugar.

The shelf life of condensed milk in the refrigerator after opening the can and pouring it into a glass container is no more than 5 days.

Condensed milk was patented in 1856 by American Gail Borden. He sought to come up with a way to store food for the long term. I tried to thicken juice, tea and even meat. Two years after the invention of condensed milk, the world's first plant for the production of this delicacy was opened in the United States.

Let's work together to make the unique material even better, and after reading it, we ask you to repost it on a social network convenient for you. net.

Secrets to saving spoiled treats

Having understood why jam is candied, you need to pay attention to several simple but quite effective ways to preserve the product. If the not fully cooked delicacy begins to sour, it is recommended to put it on the fire again. During re-cooking, sugar is periodically added to it. You can remove it from the stove only after foam stops appearing in the jam.

You should not immediately get rid of the candied product. You can add a small amount of water to it and boil for five minutes. After this, the hot delicacy should be poured into pre-sterilized jars and rolled up.

To prevent sugaring at the end of cooking, you can add to the product a solution prepared from three grams of citric acid and fifty milliliters of hot water.

Did you know that condensed milk can be easily prepared at home? It will turn out much tastier and healthier than store-bought, and you can also adjust the amount of sugar and thickness yourself for different purposes. Use the video recipe for homemade condensed milk from our chef. We will need: - Farm milk 3.4% fat, warm - 500ml - Sugar - 230g - Vanilla sugar - 4g - Water - 50ml - Soda - on the tip of a knife - Salt - on the tip of a knife - Butter - 10g.

Take a deep saucepan, pour water into it, add salt. Bring to a boil. Then add sugar, heat the syrup until the sugar dissolves. Grease the edge of the pan with butter around the entire perimeter. This will prevent the milk from boiling over. Then pour in warm milk, bring to a boil, add vanilla and soda, stirring well. After adding soda, active foam will form - don’t be alarmed. Reduce the heat to low and cook, stirring, for 5-10 minutes until the foam subsides (you can remove it with a wet spoon if you plan to store the condensed milk for a long time). Boil the condensed milk for about 1 hour. During this time, it will become creamy in color and more uniform in consistency. Cool to room temperature and store in the refrigerator. After a couple of hours it will acquire a thicker consistency.

Getting ready to cook condensed milk

The first step of the cooking process is preparing the jar. Remove the label from it. To make the task easier, pre-treat it with water. Rinse the tin thoroughly and dry with a towel. Otherwise, during cooking, the water will begin to color from the label, and the glue will begin to melt and settle on the walls of the pan or equipment where cooking is carried out.

The second important preparation step is choosing a suitable container for cooking. The deeper it is, the better. You need to pour in so much water that it covers the top border of the jar by at least 5 centimeters. This will simplify the cooking process and add liquid only once every 2 hours.

What to do to prevent the jar from exploding

A tin can will not explode, and a glass can will not burst only if it is heated evenly over the entire area. Do not allow even a small amount of liquid to boil over. During cooking, make sure that there is hot water, which you will add to the pan. Before putting condensed milk on the fire, check the integrity of the dishes.

Study the composition

A high-quality product should consist entirely of only two components - whole cow's milk and white sugar. To enhance the taste, merchants can use palm or oil, starch or thickening agents. Even if a product with such a composition can be cooked, it is unlikely that it will have a pleasant taste.

How to cook condensed milk in a jar in a saucepan

The classic way our grandmothers used to cook condensed milk is by boiling a tin can in a pan of water. This cooking method consists of several basic steps:

  • Prepare a deep saucepan with a thick bottom.
  • Fill it with clean water.
  • Place on high heat.
  • Place the tin can in warm water until it is completely covered with liquid.
  • Reduce heat after boiling.
  • Add water periodically so that the jar is always submerged.

Depending on the percentage of fat, condensed milk can be cooked for 1.5 to 3 hours. The higher the fat content. The more time it takes to cook it. After cooking is complete, turn off the stove and leave the jar to cool for 1 to 2 hours, only after which you can open it and enjoy the aromatic caramel taste.

Keep in mind that a quality product cannot have a low price. Its average price ranges from 60 to 80 rubles. A cheap product is most likely made from milk that has been previously diluted with water. It will not be possible to make boiled condensed milk from it.

Cooking Birthday Recipe Homemade Condensed Milk Delicious Food Products

Almost everyone loves condensed milk, but when we buy it in a store, we are often disappointed when we open the can. I solved this question when I tried to prepare condensed milk myself, and what’s most interesting is that it turned out to be very easy1 Many people know the recipe for condensed milk, but I didn’t find it in the Land of Masters and therefore I’m posting my mini MK. I hope it will be useful to housewives

To prepare condensed milk, we need milk with at least 3% fat content sugar soda (a little less than half a teaspoon of soda so that the milk does not curdle) For a liter of milk - 500g of sugar My milk is frozen (but this is not on purpose. I just get it in milk and save what I need quantity)

Boil the milk. Add sugar and half a teaspoon of soda to boiling milk. Stir until dissolved and put on low heat. If you just want condensed milk, then you need to cook it for 3 hours, but boiled milk takes even longer, it depends on how thick you want it (about 4-5 hours, for very thick, I cook it for 7 hours, but don’t overcook it, otherwise it will become sugary)

I boiled 4 liters of milk for 3.5 hours. The milk that came out tasted like boiled condensed milk, but not as thick, since my husband likes it thinner. I cook in a cast iron or brass pan with a thick bottom. I put the hot condensed milk in cold water and stir for about 5 minutes. Then I put it in jars and cool.

This is the amount of milk I got.

Yesterday I cooked dumplings. it took 7 hours, but the result, as always, pleased

This came out of 4 liters of milk

This condensed milk is still warm

And now she has already cooled down.

The condensed milk turns out delicious. and most importantly useful. I know that my children eat condensed milk without additives.
