It is advisable to first cover them with a clean cloth or paper - this will allow excess moisture to leave the berries, and not start the process of rotting. From time to time the raw materials need to be stirred. When the berries are dry, they can be placed in containers and stored where there is no excessive moisture or direct sunlight.
You can speed up drying by placing the rowan in the oven on a baking sheet. It is dried at a temperature of no more than 70 degrees. Finished raw materials are stored for up to 2 years.
Quick freezing is one of the simplest and most effective ways to prepare any berries, including rowan berries. To do this, they should be torn from the bunches, then sorted and placed in plastic bags or special plastic boxes. Immediately after this, the berries are placed in the freezer, where the fast freezing mode is turned on.
Rowan with sugar
A relatively simple and affordable way to preserve healthy rowan berries is to preserve them in sugar. Rowan must be picked from the bunches, washed and placed in pre-sterilized jars in a layer approximately 1-1.5 centimeters thick. Then the same amount of sugar is poured on top. So the layers alternate until the jar is full. The top layer is always sugar. Based on the preparation method, both components of the berry-sugar mixture are taken in approximately equal proportions. Alternatively, you can grind and mix the sorted and washed berries and sugar in a blender, and then transfer the mixture into jars. If you don’t have a blender, you can grind the rowan berries in a meat grinder and then mix them with sugar.
The useful product is stored in the refrigerator for up to six months, if the temperature is maintained at 0-+6 degrees; at temperatures up to +9 degrees, its shelf life is halved.
Rowan with honey

After waiting a quarter of an hour, the manipulation should be repeated. In total, the jam boils 3 times until the rowan is completely softened. Immediately after the third boiling session, the jam is poured into clean, sterilized jars, rolled up and wrapped until it cools completely.
Quick rowan jam
To make jam from rowan berries as simply and quickly as possible, you need to adhere to the following proportions:
- 500 grams of berries,
- 1 kilogram of sugar,
- 200 grams of water. If the rowan is juicy, then 150 grams is enough.
The berry raw materials are washed and sorted, after which they are blanched in water for 5-7 minutes. Separately, you need to cook the syrup by mixing water with sugar and bringing to a boil over low heat. After this, the procedure is extremely simple: you need to pour syrup over the berries and leave for 15 hours. Next, the jam is brought to a boil, and after 5-7 minutes it is poured into jars and closed with lids. This product is stored in the refrigerator. However, you can boil for 20 minutes and roll up. Containers must first be washed and sterilized.
Frozen rowan jam
If the berries were picked after frost, it will not be possible to keep them fresh or dried for a long time. The only way out is to make jam.
For it you will need:
- 700-750 grams of berries,
- 1.5 kilograms of sugar,
- 1 half glass of water.
The berries are washed and sorted, and then placed in the oven for 1 hour at a temperature of no more than 40 degrees. After this, they are doused with hot, but not boiling water. Sugar syrup is prepared separately, which is subsequently poured over the berries. The jam is cooked over low heat in 3-4 batches. After each boil, it is set aside from the heat for 15-20 minutes. The finished jam is poured into clean and sterilized containers, and after cooling they are placed in a cold place - in the basement or refrigerator.
Rowan liqueur
Rowan berry liqueur is not only tasty and aromatic, but also a healthy product in its own way. Consuming it in small doses strengthens the immune system. To prepare the drink, you need to take 1 liter of water and vodka or alcohol, 2 kilograms of ripe rowan and 1 kilogram of sugar.
The berries are washed and sorted. In a separate container, syrup is made from water and sugar. Next, pour it over the berries, mix everything and leave until it cools. Then alcohol is poured in there. The vessel must be hermetically sealed with a lid and left in a dark, cool place for at least 3 weeks, shaking occasionally. Then the drink is filtered through cheesecloth, poured into a bottle and stored in the cellar or in the refrigerator. In a few hours, a new portion of sugar will completely dissolve, and the berries will be soaked in sweet syrup. The cooled jam is reheated and boiled for 15 minutes, poured hot into sterilized jars and immediately sealed tightly. Chokeberry preparations do not require additional sterilization and can be stored well at home at room temperature.
How to keep chokeberries fresh
The time of harvest depends on the region - in the South it begins at the end of August, in the northern regions - in the last days of October and continues until the first frost. To prepare and preserve chokeberry for the winter, it must be cut only when it is fully ripe. It should darken - become elastic, tart-sweet, black or blue-violet.
Attention! For medicinal purposes, the berries are collected from mid-September until the first frost - they contain the highest amount of ascorbic acid; for food preparations - slightly frostbitten. It gets sweeter.
It is better to save chokeberry for the winter, cut already dry. Therefore, harvesting begins in clear, windless weather, when air humidity is not high. It's better to wait until the dew dries. Of course, you can do this both after and during rain, but if you do not dry it thoroughly, the berries will quickly become moldy.
The fruits are poured into enamel buckets or basins, containers made of food-grade plastic or glass, but in no case should utensils made of aluminum or galvanized be used. After 2-3 hours, the juice will enter into a chemical reaction, acquire a metallic taste and aroma, and as a result, the collected chokeberry will have to be thrown away.
It is better to cut with something sharp - pruning shears, scissors or a knife, along with the bunches. If you pick berries from the branches with your hands, they can be damaged and the juice will leak out. In addition, it will take more time. And only then, at home, the fruits are sorted, removing twigs and other wood debris.
Compote with chokeberry
You can harvest chokeberry as a separate product or as an additive to other garden crops. When cooking compotes for the winter from apples, pears or light grape varieties, black rowan fruits are often added. A useful kitchen unit may run on mains power or require heating on a stove. To prepare juice, just fill the juicer 3/4 with water, place a net on top and a bowl with fruits sprinkled with sugar in the ratio: per 1 kg of chokeberry - 200 g of sugar.

Cool at room temperature for 24 hours.
Drinks made from rowan are well preserved in the refrigerator or cellar. Having received a lot of thick, tart and healthy juice, you can make wine from it according to a simple recipe.
Chokeberry wine
The stages of making wine from chokeberry differ from the fermentation of other crops only in terms of timing. Alcoholic drinks made from grapes, raspberries, and cherries will be ready much faster. Chokeberry has a very low sugar content and yeast cultures in its juice develop reluctantly. Fermentation begins only after a week, as opposed to the usual 2-3 days for wine. To speed up the process, raisins, rose hips, raspberries, other highly fermentable products or a special starter are added to the drink.
Before preparing juice intended for wine, the berries should not be washed. This will retain more wine fungus from the surface of the fruit, and they are responsible for the fermentation process.
Adding ingredients for making homemade chokeberry wine:
- ripe chokeberry fruits - 5 kg;
- water - 1 l;
- sugar - 1 kg;
- up to 50 g of unwashed raisins.
The berries are kneaded by hand or crushed in another accessible way. The further process of making wine consists of several stages:
- The prepared raw materials are placed in a 10-liter glass jar, half the amount of sugar and raisins are added, and stirred.
- Cover the container with gauze and leave to ferment for a week, stirring the wort daily with a wooden spoon.
- When the pulp rises to the surface and foam begins to form, the drink is filtered for the first time. After straining and squeezing the removed grounds through cheesecloth, filter all the liquid through a large sieve and pour into a clean vessel to continue the process.
- The remaining amount of sugar and 1 liter of water are added to the pulp for re-fermentation. After 6-7 days, the juice can be squeezed out again and added to the general container.
- The bottle of wine is equipped with a water seal and left in a warm place for a period of 1 to 2 months. During this time, the fermentation process will be completed and sediment will fall to the bottom.
- The wine is carefully drained from the sediment, sugar or alcohol is added to obtain the desired strength and sweetness of the drink. It is bottled.
The finished wine should be stored in a cool place: a refrigerator or cellar, where it will ripen for another 3–6 months. Gradually brightening and becoming more transparent, the drink acquires a ruby color and a characteristic taste.

You can make marmalade and jam from it, or add it as a gelling component to other products. Rowan jam turns out to be very thick and is well suited for filling baked goods and pancakes.
Ingredients for making homemade jam:
- chokeberry - 500 g;
- sugar - 200 g;
- water - 100 ml.
You can make dessert from fresh, frozen and even wilted berries. The washed fruits are pre-soaked in cold water for 15 minutes.
Next steps:
- The prepared raw materials are poured into a blender and crushed. There should be grains in the mass; you should not turn the berries into a paste.
