It makes no sense to freeze a box when there is less than half of the contents left. We'll have to shift it. Also, large quantities are not always required. Sometimes small portions of 150-200 ml are needed.
How to freeze kefir, instructions:
- Pour kefir into containers and freezer bags.

No intervention is required in the process of melting kefir ice. Therefore, it calmly slowly defrosts on its own. And, if you put frozen kefir in the refrigerator, then after 6 hours there will be a wonderful, although not final, result.

Today we are preparing homemade cottage cheese - a tender, tasty and healthy treat for the whole family. Of course, every housewife has her own recipe, of which there are many, but I want to suggest you make cottage cheese from frozen kefir.
By the way, cottage cheese is one of the healthiest fermented milk products. In addition to excellent taste, it has many healing and medicinal properties. For example, cottage cheese is superior to all dairy products in terms of protein content and degree of absorption.
Well, one cannot help but note the versatility of cottage cheese in culinary terms - all dishes based on it are healthy and varied. When fresh, cottage cheese is a wonderful food in itself, and in combination with other ingredients it can become a delicious dish.
Depending on the fat content of the starting raw material, that is, kefir, the weight of the finished homemade cottage cheese may vary. For example, from 2 liters of store-bought kefir with a fat content of 3.3%, I got exactly 524 grams of the most delicate, homogeneous curd.

Cooking step by step:
All we need to make homemade cottage cheese in a cold way is kefir. I advise you to choose the product in bags - it’s more convenient to freeze it. Pour kefir from the bottles into large or several small bags, seal tightly and put in the freezer for 10-12 hours.
The result should be kefir ice like this when you remove the bags. We transfer them to a wide piece of gauze, folded in 3-4 layers.
We tie it so that this bundle can be hung. We place a wide and deep dish under this bundle and hang it. The most convenient way to do this is in the bath - place some kind of stick across it, on which you hang the bundle. I do this in the evening so that the cottage cheese is ready by morning.
As a result, the whey will come off, and the curd will remain in the gauze. It is very tender and completely homogeneous, without grains. The consistency is more like cream cheese.
