Now you know what white vinegar is (we explained what it is above). Currently, two types of this product are used for household and culinary purposes:
The first contains acetic and other food acids (for example, tartaric, citric, malic, rice, cane, fruit, etc.), as well as esters, aldehydes and complex alcohols. The combination of these components creates the familiar pleasant aroma of natural vinegar.
As for the second product, such vinegar is obtained by diluting synthetic, highly concentrated acetic acid, which does not have pleasant aromatic properties. However, it emits a specific pungent odor.
Cooking process
Before you start diluting the highly concentrated essence, you should boil regular drinking water and then cool it. Next, mix two different liquids. This must be done based on what kind of solution you need to get. If 3% table vinegar is required, then 10 parts of water should be added to part of the original 30% raw material (for 70% - 22.5 l), if 6% - then 1 to 7 (at 30%) and 1 to 17 (at 70 %). If a 9% solution is needed, then the proportions will look like this: 1 to 3 (with an initial solution of 30%) and 1 to 7 (at 70%).
By following these diagrams, you will get real table vinegar. You can regulate how many percent of the solution is required for certain purposes. This product can be stored in the refrigerator or at room temperature.
In the kitchen you can’t do without a measuring cup, a kitchen scale, and, for some time, a calculator. After all, if 20 years ago there was only classic 9% vinegar on sale (aka table vinegar, acetic acid, also known as E260), then today there is nothing in supermarkets - essence, wine, apple and rice vinegars... Is it possible to use all these products for home canning? Of course. But what if your recipe calls for table vinegar, but you have essence? Calculate the ratio you need. How is white vinegar made?
We have already told you what it is and what types of this product exist. Now it’s worth telling you about exactly how it is produced.
The raw material for the production of natural vinegar can be rectified ethyl alcohol, as well as secondary products of its production. Also, this product is often obtained from apple and other fruit juices. White wine vinegar is especially popular among chefs. It is made from fermented wine materials.
Alcohol is oxidized using acetic acid bacteria in special circulation devices or using the deep method.
As for synthetic vinegar, its main raw material, as already mentioned, is acetic acid, which is produced through the chemical synthesis of natural gas, various by-products, and also as a result of dry distillation of wood.
It is believed that synthetic white vinegar, the photo of which is presented in this article, has a detrimental effect on human health, and therefore it is undesirable to use it in cooking. This product is best used for domestic purposes.
Composition and use
Traditional table vinegar has the following characteristics:
- It is a transparent mixture of distilled water and acetic acid in a concentration of 3–15%.
- It has a pungent sour smell and the same taste.
The acid used to make table vinegar is of natural or synthetic origin. It is obtained through microbiological reactions of fermentation of alcohol-containing products, from oil production waste, or as a by-product during dry distillation of wood.
It is believed that a product of natural origin is more physiological and beneficial to health. Artificial vinegar may contain residual aldehydes and other chemical impurities. However, it can be almost impossible to determine externally what a particular product was made from.
High-quality vinegar is colorless, has no sediment or any foreign odors, and does not contain substances other than acid and water.
The formula for table vinegar is simple: H2O+CH3COOH, combined in the required percentage. This liquid is universal and has no restrictions in use: it does not change its properties when heated or long-term storage, and can be used for food and household purposes.
Popular table vinegar is intended for cooking: adding a sour taste to marinades, sauces, appetizers, salads, meat and fish dishes, improving the structure of dough, preparing canned vegetables and meat. This liquid is used in the household to clean and disinfect kitchen utensils and various surfaces, get rid of unpleasant odors, and add to water when washing clothes to preserve color and remove stains. Table bite is a popular product for home cosmetic and medicinal procedures: rinsing hair, getting rid of bad breath, age spots, freckles, calluses, to make the skin whiter.
Along with the traditional 3–15% acid solution, table vinegar is often called balsamic or fruit vinegar: wine, apple, malt. This product, made from natural raw materials, may differ from ordinary table vinegar in smell and color. Wine and apple have an amber or reddish color and a slightly spicy aroma. In addition, real fruit vinegar contains B vitamins, ascorbic acid, carbohydrates, pectins and organic acids. It is no coincidence that such a product is considered more useful and deserves a place on the table. The concentration of fruit vinegar is 3–6%. It is used in food, added to ready-made meals and snacks, or for preparing homemade cosmetic masks and lotions. It is with this vinegar that it is useful to prepare dietary and medicinal drinks to improve blood composition, lose weight, improve metabolism and vascular tone.
It is not recommended to use fruit vinegar in the process of preparing hot dishes, in canning or for household purposes, as it quickly breaks down.
Despite the characteristic name - table solution, drinking this solution or applying it to open areas of the body in its pure form is prohibited. The acid contained in even a weak product, if it gets on the mucous membranes of the digestive tract, on the skin or in the eyes, causes irritation, and a 9-15 percent solution causes chemical burns and injuries. Before use, the liquid must be mixed with other products or substances.
People suffering from high acidity of gastric juice, peptic ulcers, gastritis, and inflammation of the duodenum should not consume vinegar and products containing it. Abuse of the substance leads to ulceration and bleeding of the mucous membrane of the oral cavity, esophagus, and disruption of the liver and kidneys.
Types and uses of vinegar
Depending on the use of a particular raw material, natural vinegars can be of the following types:
- Wine. This product is obtained by fermenting wine. To do this, it is aged in oak barrels or glass jars. How is white wine vinegar used? The uses of this seasoning are varied. However, most often it is added to various sauces.
- Fruit. This type of vinegar is made from sour fruit juices. As a rule, it is used for preparing various drinks, acidifying cabbage soup, borscht, salads, in particular vinaigrette, creating mayonnaise, canning vegetables, etc.
- Fruit and berry. This type of vinegar is made by fermenting fruit wine. Its main difference from other seasonings lies in its unsurpassed aroma. This product is added to soups, stewed vegetables, salads, stews, etc.

Vinegar from 70 to 9 percent (the table presented later in the article contains proportions indicated in spoons, glasses and milliliters) can be prepared using different cutlery.
Before you start creating 9% vinegar from essence, you should familiarize yourself with the basic principles of preparing the solution:
- Before starting manipulations, it is necessary to protect the skin of your hands and lungs. To do this, you should wear medical gloves on your hands, and a disposable medical mask on your face;
- The essence must be dissolved in water, but water cannot be poured into the essence;
- water must be boiled and completely cooled before use;
- After mixing water and essence, the finished solution must be poured into a prepared, hermetically sealed container. Additionally, it is required to mark the concentration of the finished solution on the container;
- Manipulations should be carried out in a well-ventilated area.
Important. The container with the solution should be tightly closed (vinegar evaporates quickly) and stored away from the sun (sun rays shorten the shelf life of the product). Also, the solution should be kept away from children’s reach, since ingestion of even 50 ml of 9% vinegar can lead to death due to severe poisoning of the body, burns to the mucous membranes of the gastrointestinal tract and respiratory organs.

- P is the required volume of essence;
- P – what percentage should the finished solution be?
- K – amount of ready-made solution according to the recipe;
- E – what percentage of essence used.

Here's an example for a sample:
- Essence 70% is available. This is the "E" in the equation;
- You need to prepare 200 ml of vinegar solution. In the equation it is the letter "K";
- You need to prepare a vinegar solution with a concentration of 9%. This is the letter "P" in the equation.
- You need to find how many milliliters of essence you need to use to prepare 200 ml of a 9% vinegar solution. This is the letter "P" in the equation.
The following is the solution according to the equation:
P = (9%*200 ml)/70%=25.71 ml.
That is, to prepare 200 ml of a 9% solution you will need 25.7 ml of 70% essence. To calculate how much water is needed, it is enough to subtract the volume of essence from 200 ml (that is, 25.7 ml). It turns out that you need 200-25.7 = 174.3 ml of water.
- If you need to use up all the essence at once. For example, a housewife always needs only a 9% solution, but only essence was available in the store. Formula for calculating the required amount of water: V=(O*E)/P, where:
- B is the required volume of water to prepare 9% essence;
- O is the volume of essence available;
- E is the percentage of essence used;
- P is what percentage the vinegar solution should be.
For the sample, the following example is produced:
- 200 ml of essence is available. This is the "O" in the equation;
- The concentration of the essence is 70%. This is the "E" in the equation;
- The output should be a vinegar solution with a concentration of 9%. This is the letter "P" in the equation.
- You need to find what volume of water is needed to prepare a 9% solution from a given amount of essence. This is the letter "B" in the equation.
Solution of this equation taking into account the specified data: B = (200*70%)/9%=1555.56 ml or 1.56 l.
When using formulas, a properly prepared vinegar solution with a concentration of 9% is obtained. If the solution is prepared according to the table (that is, using a spoon, glass or milliliters), then the solution is obtained with slight errors. These equations can be used to prepare solutions with different concentrations, as well as when using essences with different concentrations.
Important. It is strictly forbidden to store prepared vinegar in a metal container or container with a metal lid, since the metal reacts with the vinegar. Ideally, it is recommended to pour the prepared solution into a glass container and close tightly with a plastic lid.
Where else is vinegar used?
In addition to food and household purposes, vinegar is also used for other needs. For example, in folk medicine it is used in low concentrations to wipe the human body at elevated temperatures. However, for this you should use only a natural product. Otherwise, you risk severe allergic reactions and burns.
Vinegar is also often used in pharmaceuticals and cosmetology. It is added to various medications, tinctures, as well as ointments, lotions, deodorants, and eau de toilette. In addition, such a product is often used to make household chemicals.
It should also be said that white vinegar is used in non-traditional methods of treating animals and for acidifying the soil in the agricultural industry.
How to replace vinegar essence 70% with vinegar 9%
It is easier to formulate vinegar from 70 to 9% (the table allows you to simplify the process of preparing solutions) than to create a 70% essence from 9% vinegar. In this case, it is impossible to increase the concentration of vinegar, but you can increase the volume of the vinegar solution used.
Formula for calculating the volume of vinegar solution in the absence of essence: (O1*E)/P=O2, where:
- O1 is the required volume of essence in ml;
- E is an indicator of the concentration of the essence in%;
- P is an indicator of the concentration of the vinegar solution used in%;
- O2 is the required volume of vinegar solution used in ml.
The following is an example of calculations:
- A 9% vinegar solution is available. This is the "P" in the equation;
- for preparation (for example, marinade), you need to use 5 ml of essence. This is the letter "O1" in the equation;
- the essence concentration indicator should be 70%. This is the letter "E" in the equation.
You need to find what volume of 9% vinegar solution is needed instead of 10 ml of 70% essence. This is the letter "O2" in the equation. Next, the calculation was made using the presented formula: (5 ml * 70%) / 9% = 38.89 ml. That is, in the absence of 70% essence, 38.9 ml of a 9% vinegar solution should be used.
But, if the recipe does not allow the presence of excess liquid (vinegar solution is essence and water), then replacing the essence with vinegar solution is not permissible. For example, when using essence to clean rust from appliances.
Replacing vinegar in cooking
As mentioned above, white wine vinegar is very often used in cooking. What can you replace this product with if you don't have it in stock? To do this, you can use other types of similar seasoning. For example, apple, cane, malt, fruit or fruit vinegar. Also, some housewives use a product of synthetic origin. But for this it is recommended to dilute it to 4-5%.

Apple

Balsamic

Malt

How is vinegar made?
To obtain vinegar you need natural raw materials. A variety of fruit juices, grape juice and the remains of wine material can act in this capacity. As well as rectified ethyl alcohol and its derivatives. Alcohol is fermented using acetic acid bacteria. The process of complete oxidation is not allowed, otherwise complete decomposition into water and carbon dioxide will occur.
After the oxidation process is completed, it is necessary to clean, pasteurize and bottle the finished product. In some cases, the substance must be diluted.
Selection and storage of table vinegar
When purchasing, it is recommended to choose liquid in glass containers. When exposed to acid, plastic packaging can release chemical impurities into its contents. A high-quality solution is absolutely clean and transparent, there are no air bubbles, flakes or floating particles in it. A slight sediment can only be in natural fruit vinegar. When shaking, a small amount of foam may appear, disappearing after a few seconds. The label must indicate the name and legal address of the manufacturer, and the date of packaging. If the shelf life of the product is not limited, then the acid in it is of synthetic origin. This is the norm for domestically produced food vinegar. Natural apple, wine or balsamic vinegar has a shelf life of no more than six months. The packaging of a natural product must indicate the production method: aerobic fermentation with acetic acid bacteria.
At home, the product is stored at room or slightly cool temperature: for example, in a kitchen cabinet in a tightly closed container; a dark glass container is ideal. Do not place the liquid in the refrigerator or freezer, or leave it near heating appliances.
White vinegar
If you look at what white vinegar looks like, it can be confused with regular table vinegar. Malt vinegar has a yellowish tint, but after purification it becomes colorless. Since it has a rather strong odor and sour taste, it is not used for salad dressing or consumption in finished form. The most common areas of its application are the production of marinades and preservation.
But beer wort is not the only material from which this type of vinegar is produced. Then white vinegar - what is it when it is obtained from other raw materials? The base is white wine. Due to its milder and more pleasant taste, it is often used in preparing a wide variety of fish and meat dishes. It is used for dressing vegetable salads and preparing various sauces.
Apple vinegar
One of the most accessible and familiar.
Most often, such vinegar is made from apple cider, fermented apple juice or apple pulp. But synthetic apple cider vinegar is also available on sale. When purchasing, read the label carefully! The strength of natural apple cider vinegar is 4-6%, while synthetic apple cider vinegar is usually 9%. In a bottle with a natural (unpasteurized) product, some time after bottling, a natural sediment forms - harmless flakes of a brownish tint. This cannot happen in a synthetic solution; it is a “lifeless” solution. Finally, natural apple cider vinegar is much more expensive than synthetic one – 1.5 times or more.

Apple vinegar
Using Apple Cider Vinegar
Apple cider vinegar is one of the mildest and sweetest in taste. It works well as a natural preservative in recipes for pickled vegetables with a short shelf life (2-3 weeks), but is not suitable for longer-term preservation - it is too weak. Therefore, when preparing marinades, do not dilute it with water and use a bite of at least 5% strength. Apple cider vinegar is ideal for quickly pickling onions, asparagus, zucchini , cauliflower, broccoli, beets, carrots and dill. It can replace lemon juice in various soups or sauces; it activates the work of soda in baking.
Apple cider vinegar is loved in the USA and BBQ sauces are actively prepared with it. To do this, vinegar is mixed with ketchup, seasoned with salt, freshly ground black pepper and dry chili flakes and served with grilled meat, such as ribs. A good sauce can also be made from apple cider vinegar, tomato paste, mustard, pineapple pieces with the addition of sugar, salt and freshly ground black pepper. This sauce is great for sandwiches and burgers with pulled pork and coleslaw salad.

What is balsamic vinegar
To obtain balsamic vinegar, it takes a lot of time, a large amount of a certain grape variety and adherence to all the manufacturing technology, which is more difficult than it might seem. But thanks to its taste characteristics, it is considered the most valuable type of vinegar.
It is produced in one region of Italy - Modena. Juice is extracted from white grapes, which is then subjected to a caramelization process. Since sugar darkens when heated, the substance acquires a dark color and a special taste. Unlike all other vinegars, balsamic is aged in wooden barrels for at least 12 years.
Since the complexity of production seriously affects the price, on store shelves you can most often see simpler versions of vinegar, for the production of which the technology is not so strictly followed. At the same time, this is a quite high-quality product that can be used for dressing salads, adding to sauces, sprinkling on meat and desserts.
