How can you replace parchment paper for baking?

Pizza on parchment paper recipe

Pizza in the oven is now the main way to prepare pizza.
I remember the Russian stove and again I remember the Italian cinema where they bake pizza. Well, how similar it is to our ovens. Only in those days when we did not yet have electric or gas ovens, we simply did not know what pizza was. Of course, another of the main ways to prepare pizza is pizza in a frying pan.

But now we cook them every time and with whatever we cook them with. And pizza in the oven, and in a slow cooker, and with sausage and cheese, and with cucumbers, and with olives, and with mushrooms, in general, with everything that you can eat.

Is it possible to replace baking paper with foil?

If you have food foil at home for baking, it can also be used instead of paper, but with some nuances:

  • If you bake dough products, the foil should be greased with oil. There is no need for baking vegetables, fish, or meat;
  • To prevent the dough from sticking to the foil, place it with the matte side on a baking sheet and the shiny side on top.

You also need to remember that the matte side can oxidize due to contact with the product and change its taste.

Foil can not only be placed as a sheet on a baking sheet, like paper. You can make any arbitrary shape from it, for example for a pie. The sides will prevent leaked juice from getting onto the baking sheet and burning. To create the molds, you need to take two or even three layers of foil, then it will fold easily and will not tear. To prevent the top of the pie from becoming too hard, you can cover it with a sheet of foil and remove the sheet about 10 minutes before it’s ready to allow the top to brown slightly.

Knowing what you can replace baking paper with, you won’t find yourself in a hopeless situation if it suddenly runs out, and baking will always be successful.

When baking something on a baking sheet in the oven, housewives usually use special baking paper. But what if it ends at the most inopportune moment? How to replace baking paper?

Nowadays, pizza is so widespread in our country that even kids know about it. And it would seem, well, what’s special there? For filling:

Pizza in the oven preparation:

1. Pour 100 ml. warm water in a small cup and add yeast to the water, add a spoonful of sugar. Mix everything.

2. Pour pre-sifted flour into a deep cup. Make a depression in the center of the mound of flour. Pour the diluted yeast into this well.

3. Little by little add flour to this yeast and stir; add very little flour, just so that it mixes with the yeast in the well where we poured the yeast. Set the flour aside for a moment.

4. Pour salt and 4 tablespoons of olive oil, or any odorless vegetable oil, into the remaining water.

5. Pour water and oil into the dough and now begin to knead the dough. First, mix with a spoon, and when the water is absorbed, begin to knead with your hands.

6. When all the water has been completely absorbed, dump the dough onto the prepared table. We continue to knead. All the flour should be incorporated into the dough, the dough will become elastic and smooth. In general, it already looks like dough. From this point on, the dough must be kneaded for at least 7-10 minutes.

Is it possible to replace parchment paper with foil?

Most often I am asked exactly whether it is possible to bake sponge cakes on foil and use it for other desserts. To be honest, I use it all the time myself. But not as a replacement for parchment. Foil is great for increasing the height of the sides of the pan or as a base for a baking ring. It also helps redistribute the heat well on the top of the biscuits.

I do not recommend replacing parchment paper with foil. Of course, you don’t have to worry that it will catch fire or spoil the baked goods with foreign odors, tastes, or toxic substances. This is already a big plus, but there are also disadvantages:

  1. Even greased foil will definitely stick to the dough.
  2. The metallic coating increases the temperature on the surface of the dough, causing it to burn quickly.
  3. The process must be constantly monitored by turning the pan over. That is, every few minutes we will have to open the oven. There will be no talk of, for example, a sponge cake rising normally.

Foil is great for meat, fish and other juicy foods. But in the confectionery business it is assigned only an auxiliary role in the oven. You can bake cookies on foil. But, most likely, it will burn on you too.

Pepperoni Pizza with Spicy Sausages - Step by Step Recipe

Many people love Pepperoni pizza because the main ingredient in its topping is spicy Pepperoni sausage. In this recipe I will write how to make pizza that will be no worse than in a pizzeria: thin, crispy, aromatic and very appetizing.

Ingredients:

for test:

  • flour - 250 gr.
  • fresh yeast - 7-10 gr.
  • warm water - 100 ml
  • sugar - 1 tsp.
  • salt - 0.5 tsp.
  • olive oil – 20 ml

For filling:

  • Mozzarella cheese - 300 gr.
  • Pepperoni sausage (or spicy Salami) - 250 gr.
  • pulp of grated tomatoes - 150 gr.
  • fresh basil - 30 gr.
  • pepper - to taste

Pepperoni Pizza Recipe:

1.Take warm water (about 30 degrees), pour it into a bowl. Add a teaspoon of sugar and stir until the sugar dissolves. Crumble the pressed yeast into this water. Add a tablespoon of flour and whisk to disperse the yeast.

Fresh yeast can be replaced with dry yeast. Take 3 grams of dry. You shouldn’t put a lot of yeast on one pizza, it’s not a pie.

2.Cover the dough with a towel and leave for 5 minutes. After five minutes, add salt and olive oil to the dough, stir.

3. All that remains is to add flour to the dough. Be sure to sift the flour through a sieve. Add half the flour first and mix with a spoon. When the dough is already thick, start kneading with your hands. Add all the remaining flour. Knead the pizza dough for at least 15 minutes until it becomes soft and does not stick to your hands.

4.Gather the dough into a ball and place in a bowl under a towel to rest for 1.5 hours.

5.Prepare the filling. Cut the sausage into thin slices. Grate the mozzarella on a coarse grater.

6.Tomatoes need to be pureed. If you make it yourself from fresh tomatoes, remove the skin. To do this, make a cross-shaped cut on the tomato and pour boiling water over the entire tomato for 1-2 minutes. After this procedure, the skin can be easily removed. Wash the basil leaves, dry them and chop them as finely as possible. Add herbs to tomato sauce. Add salt and pepper to taste and stir.

7.When the dough has risen, take it out and place it on a table sprinkled with flour. Using your hands, form into a round shape. You can shape the pizza with your hands, stretching the dough, or you can roll it out with a rolling pin. Roll out into a thin circle, larger in diameter than the pan.

8. Grease a mold or baking sheet with vegetable oil and lay out the pizza preparation. Fold the edges over to form sides.

9.Brush the pizza with sauce, spreading it evenly over the entire surface.

10. Sprinkle cheese all over the pizza so that the cheese covers the sauce.

11.Place the sausage slices on the cheese.

12. Preheat the oven to 130-140 degrees and bake the pizza for 7-10 minutes. Be guided by your oven.

13. That's it, thin crust pizza bakes very quickly. Pepperoni turns out very tasty, try it!
