  • It is advisable not to choose glass containers for freezing. But if there is no other option, they are filled with juice, leaving space for the liquid to expand when freezing.
  • Thawing of the product should be gradual, under natural conditions. Do not place it in hot water.
  • Freezing, in contrast to canning, which involves sterilization, allows you to preserve a larger amount of useful substances contained in juices.
  • Fresh berries can also be frozen for the whole winter, and after defrosting, freshly prepared.
  • If you pour the liquid into ice molds and put it in the freezer, you will get fruit and berry cubes that can be added to a milkshake, decorated with ice cream and put in tea for cooling.

Here the juice will need to be filtered from fresh pulp that has gone through a meat grinder. To do this, the gauze fabric needs to be folded in about four layers. If you have a special press, use it. This will make the whole process much easier.

Components:

  • Apples - as many as you have;
  • Sugar - optional.

Peel the fruits from seed pods and cut into quarters. After this, leave the resulting mass for a couple of hours. Filter the juice through a gauze cloth or using a special press.

Pour it into a saucepan or deep bowl and boil. But don't let it boil completely. If necessary, add granulated sugar and seal in prepared jars. Leave to cool.

Apple-grape juice

Many of us have known this blend since childhood. So among those who are engaged in canning or simply love homemade juices, this option is no less popular than just apple juice.

In this recipe, quantitative advantage is given to grapes. However, the proportions can be freely varied depending on the number of berries available.

Components:

  • Clarified apple juice – 1 liter;
  • Dark grape juice – 1 liter;
  • Light grape juice – 3 liters.

The cooking process itself is incredibly simple. Pass grapes and apples through a juicer. Each juice must be produced separately, in the required quantity. Then mix all the available juices in a saucepan and boil.

Boil for about five minutes. Don't forget to remove the foam. Strain the liquid through a gauze cloth and boil again. Then pour into jars and seal with a key.

This juice ends up being quite concentrated. Therefore, before drinking, it is advisable to dilute it with water.

How long can juice be stored?

During long-term storage, the quality of any product gradually deteriorates.

This also applies to freshly squeezed juices. Doctors recommend that patients drink no more than 750 ml of fresh juice per day (3 times a day, 250 ml). Therefore, you need to prepare no more than 1 glass for each meal.

Sometimes it is necessary to dilute the concentrated drink with water, but there is no need to consume more than the specified volume, since there will be practically no benefit to human health.

If anything remains, for example, 1/5 of the total volume of the drink, then this liquid is most often left for storage in the refrigerator.

Homemade juices have different shelf life. How long can such liquids be stored in the refrigerator? It all depends on the vegetable or fruit from which this or that drink was obtained:

  1. Apple juice darkens when stored in the refrigerator for 5-6 hours. It contains a lot of iron, which oxidizes when exposed to air. To prevent this from happening, it is recommended to add ascorbic acid to the liquid or squeeze 4-5 drops of lemon into the drink.
  2. It is better to drink carrot juice immediately after preparation within 10-15 minutes. But if you get a lot of liquid, then you need to pour the rest into a bottle and close it well. After this, the vessel is taken out into the cold in a dark room or cellar. The juice will last up to 48 hours.
  3. When preparing fresh beetroot, it is kept (infused) for 40-60 minutes before use. After this, the liquid is diluted with water and drunk. Leftovers are stored refrigerated for 2 days.

Some people are interested in whether and how long cabbage juice can be stored.

It must be drunk immediately after preparation, as it spoils quickly.

If you make freshly squeezed juice from berries, how long such liquid is stored depends on the type of fruit.

For example, raspberry, grape, peach, strawberry and similar berry drinks will quickly ferment if kept warm. In the cold, their storage time increases to 24 hours. To increase the storage period, you can add up to 15 drops of ascorbic acid or lemon per 500 ml of squeezed liquid.

Cherry, currant, pomegranate, lemon, orange and tangerine drinks can be stored in the cold for up to 2 days, since these fruits contain acid, which serves as a preservative.

Apple-peach juice

Simply amazing drink. Fans will definitely appreciate it. Apple and peach create an amazing flavor alliance. So, when you start making apple juice for the winter using a juicer, be sure to try this option.

Components:

  • Apples – 3 kilograms;
  • Peaches – 5 kilograms;
  • Granulated sugar – 3 tablespoons.

Rinse all fruits thoroughly and remove the skins. Pass through a juicer. If you have not sterilized your jars, do so now. Sterilization should not take less than ten minutes.

Combine apple and peach juices and let it boil. Pour granulated sugar into the juice mixture and boil for about seven minutes. Afterwards, you can pour the juice into jars and seal them.

Does it help you lose weight?

Anyone on a diet will benefit from several products at once.

  • Tomato is considered the best vegetable for weight loss. It helps get rid of excess fat, quickly saturates the body so that you don’t want to eat for a long time, and lifts your mood.
  • Pineapple contains bromelain, which breaks down fats, so for greater effect, fresh juice must be made with the pulp of the fruit.
  • An apple fills the stomach without burdening it, and at the same time cleanses the body of toxins and waste.

Calorie content

Apples contain 45 kcal per 100 g, so the juice can be drunk in large quantities - up to a liter per day.

Tomatoes have even less - only 20-22 kcal per 100 g. Adding salt will not add calories, but will significantly reduce the beneficial properties of the product.

What and how long should you store freshly squeezed juice?

It is considered most optimal to store juice in a hermetically sealed glass container, where oxidative processes will occur more slowly. The product must be on the refrigerator shelf, where it can remain usable for 12-24 hours.

Storing juice in a plastic container is undesirable, since this material (polyethylene terephthalate) cannot be sufficiently sterilized. Therefore, the pomace, being in such a container, will in no way be protected from the development of harmful microorganisms in it. In this case, fermentation will begin earlier than for the same product in a glass container that has undergone sterilization.

Storing juice in a vacuum is much more effective than storing juice in glass or plastic containers. Under such conditions, the product will not interact with air and can be stored for several days. The fresh juice is poured into a vacuum container, after which the air is pumped out of it using a special device. But you should remember that the healthiest drink is one that was made no more than an hour ago.

Apple fresh

The shelf life of freshly squeezed apple juice in the refrigerator is 12-18 hours due to rapid oxidation. This product is susceptible to rapid destruction of vitamins. To keep it for 1 day, it should be mixed with a few drops of lemon juice.

Citric

Even taking into account the natural preservative properties of this citrus, lemon juice can only be stored in the cold for 3 days. And in the heat it will begin to deteriorate after 3 - 4 hours.

Orange

Orange squeeze is most popular among healthy eating enthusiasts. Many different drinks are made from it, combining it with apple juice, carrot juice, etc. Mixed types of pomace are stored for no longer than 24 hours. Fresh orange juice can be consumed within 2 days. Provided it is stored on the refrigerator shelf.

Birch

Freshly collected birch sap retains its quality for 3 days. The main condition is to keep it in a glass container, tightly closed. If the drink has not been drunk within 3 days, it should be thrown away without regret. This product can no longer be used.

Carrot

Carrots are very healthy due to their carotene content. Therefore, fresh carrot juice is recommended for everyone. But there is a minus here: it must be consumed immediately after production. Interaction with air after 20 - 30 minutes leads to the destruction of most of the beneficial substances contained in the liquid.

Beetroot

Beet juice is an exception. It should be consumed after it has infused. Usually, 2-3 hours in the refrigerator is enough for this. The shelf life of beet juice is about 3 days.

Cranberry

It is not customary to mix cranberry juice with anything else. But it is often used to make healthy fruit drinks, which can be stored in the refrigerator for 2 days.

Tomato

Fresh tomato products are rich in folic acid, iron and other substances needed by the body. But you won’t be able to keep it for long. This drink should be used within 12-18 hours from the moment of preparation. And store only in the refrigerator, in glass or ceramic containers. Once opened, a canned drink can be stored for a little longer - 1-2 days.

Apple-orange juice

This option, it must be said, is used very rarely. But apple juice can be given a completely new taste if you mix it with orange. You can take different proportions from those proposed, changing the taste and level of sweetness in one direction or another.

Components:

  • Apples – 2 kilograms;
  • Oranges – 3 pieces;
  • Sugar - optional.

Pass the apples through a juicer and filter the resulting juice through a gauze cloth. Process the oranges in the same way. Mix the prepared juices together.

Pour the finished drink into a saucepan. Add sugar if necessary and bring to a boil. As soon as the juice boils, fill the jars that have been sterilized in advance. Then place them on the lids and let them cool. You can enjoy it!

Rules for storing apple nectar

To extend the shelf life of the drink, you can resort to special storage methods. It will stay fresh longer if you refrigerate, freeze, or can it, but each of these methods has certain pros and cons.

In a refrigerator

The drink can be stored in the refrigerator for no longer than 4 hours, after which there will be almost no useful vitamins left in it. To extend the shelf life of the product, you can add lemon juice and sugar to it.

If immediately after preparing such a drink you put it in the refrigerator and cover it with a lid, then it will last up to 12 hours and will not spoil. However, you will not be able to get the initial benefit from it.

Low temperature will only slow down the fermentation processes, but will not be able to stop the process of destruction of vitamins and microelements.

The juice must be sealed. It is best to pour it into glass containers. In a vacuum container it stays fresh for 24 hours.

At room temperature, without boiling

It is not recommended to drink freshly squeezed juice that has been left in the room for more than 2 hours. The warmer the room, the higher the risk of food poisoning.

If you cannot consume the entire portion at once and there is no way to put the drink in the refrigerator, proceed as follows:

  1. Pour the drink into a glass container.
  2. Add lemon juice to it. For 1 glass of drink, 1/2 tsp is enough. lemon squeeze. This is done so that it does not darken.
  3. Cover the container with a lid. This way, contact with oxygen will be less active, and the nectar will remain fresh longer.

The undoubted advantage of this storage method is that the drink does not lose its beneficial properties. However, its significant disadvantage is the rapid deterioration of the product.

Preservation for the winter

You can preserve the drink for the winter in order to saturate your body with vitamins and microelements during the cold season. If you carry out the procedure according to the rules, it will be stored for six months or more.

Apple juice extracted using a juicer or meat grinder is canned as follows:

  1. Add citric acid and sugar to the nectar. For 1 liter of drink you will need 1 tbsp. l. lemons and 2 tbsp. l. Sahara.
  2. Jars and lids are thoroughly sterilized.
  3. The strained drink is poured into an enamel container.
  4. Bring the drink to 90 degrees. Any foam that appears is removed with a slotted spoon. When the juice starts to boil, turn off the fire.
  5. Filter the drink through cheesecloth and heat it again to 85 degrees.
  6. Roll the juice into jars.

After 10 days they can be removed to a place of permanent storage. Aluminum containers cannot be used for cooking.

Using a juicer makes it easier to preserve your drink. It is enough to cut the apples without peeling them or removing the seeds.

Disadvantages of the method:

  • When the drink is heated, some of the beneficial substances are destroyed;
  • the method requires time;
  • Sugar should be used as a preservative.

Pros:

  • the taste becomes softer;
  • it is possible to prepare a lot of juice at one time;
  • under the influence of high temperatures all microbes will be destroyed;
  • The shelf life increases by several months.

The juice turns out delicious if you add pears or pumpkin pulp to it.

Frozen

To preserve maximum benefits in the drink, it can be placed in the freezer.

Procedure:

  1. Pour the nectar into plastic containers or bottles with a screw cap.
  2. When filling the container, you need to leave some space. When freezing, liquid molecules increase in size, so a full bottle can burst.
  3. Place the container in the freezer.

The juice is not boiled before freezing, so it retains maximum benefits. To enjoy the drink, remove it from the freezer in advance and wait until it thaws at room temperature. You can speed up this process by immersing the container in warm water.

  • preservation of all useful properties;
  • speed of preparation;
  • ease of storage;
  • extension of shelf life to 12 months.

It is better to freeze juice in containers that are equal in volume to a single serving. Repeated freezing is unacceptable.

Selecting apple varieties for making a drink

Before choosing the variety of the main fruit to create apple juice for the winter, you need to decide on the final result that you want to get.

So, depending on the variety, the finished drink may come out sweet, or maybe sour.

Apples "White filling"

In addition, big fans of apple juice with pulp should pay attention to the following varieties:

  • Antey;
  • White filling;
  • Freedom.

These apples themselves have a dense structure, so the finished juice is guaranteed to have a lot of pulp.

Apples "Antonovka"

And those who like sourness in taste should take a closer look, for example, at Antonovka and Nizhegorodka. By the way, professional chefs highly recommend canning juices made from sour apples. They last an order of magnitude longer than sweet juice.

A very important point! It will be useful to learn to distinguish between summer apple fruits and those that ripen quickly enough. In addition, you should not mix different varieties with each other. And even more so - sour and sweet. This will be completely unnecessary.

Recommendations and lifehacks

To maintain nutritional value for as long as possible, use the following recommendations:

  • When storing fresh juice in a freezer, re-freezing is not allowed. After defrosting, the drink can be stored for no more than 12 hours in total.
  • For cooking, use only high-quality, proven ripe fruits, berries and vegetables. Rinse them thoroughly, sorting and removing moldy or fermented raw materials.
  • If there is a small amount left, try using it in cooking (for example, freezing fruit cubes to add to smoothies).
  • The shelf life is also affected by the material from which the packaging is made. The most suitable is a vacuum container, where oxidation processes are slowed down by pumping out air. Various microorganisms easily penetrate into ordinary plastic containers, accelerating decomposition processes.
  • It is still better to roll large volumes of fresh juice into sterile glass jars.
  • Adding a few drops of lemon juice to the contents of the container extends the life of some types of drink.
  • It is not recommended to give concentrated fresh juices to children under 3 years old - it is better to offer your child juices for baby food in tetra-packs: “Babushkino Lukoshko”, “Frutonyanya”, “Agusha” or homemade compotes.
  • If you find signs of spoilage, discard the product or use it at home (for example, adding it to face or hair masks; lemon juice can remove some stains). Remember that drinking a fermented or sour drink can lead to poisoning or intoxication of the body.

Various types of fresh juices

Each fresh juice has individual properties and characteristics, which are determined by the product from which it is prepared. Not many people know how long fresh pomace from various derivatives can be stored. Let's see how to store the juice of celandine, apples, carrots and other derivatives?

Apple

Apple juice should be stored in the refrigerator for no more than 4 hours. The vitamins and minerals in this product are destroyed very quickly, especially iron, due to the oxidation of which the juice changes color. The taste of the fresh juice will also change. However, you can squeeze it for a while to make it a little softer. The storage process should be organized as follows: pour the liquid into a glass or plastic container with a tight lid

It is important to exclude access to oxygen; this approach preserves more vitamins

Orange

Freshly squeezed orange juice retains its properties a little longer. It should also be stored in the refrigerator, as it will quickly ferment in a warm room. Many claim that the shelf life of the drink can reach 12 days; this statement is quite controversial. Professionals do not recommend storing freshly squeezed orange juice for more than 2 days. At the same time, it is better to store it in a glass container and tightly closed.

Citric

Lemon juice should be stored in accordance with the recommendations for the fruits described above. This is a tightly closed glass container and refrigerator. Despite the fact that lemon is considered a natural preservative, the juice of this fruit is not recommended to be stored for longer than 3 days. And at room temperature, fresh juice will spoil after a few hours. You can freeze the product by placing it in ice bags. This approach will allow you to store fresh lemon juice for more than six months.

Carrot

Carrots are a very healthy vegetable, and freshly squeezed carrot juice also has a lot of positive properties. It has a tonic and restorative effect on the body. In addition, it promotes active growth and has a beneficial effect on vision. This product cannot be stored for longer than half an hour, so it must be squeezed strictly in the amount that will be drunk immediately. Even a cooling device will not help preserve fresh juice longer.

Beetroot

How long can beet juice be stored? It is not recommended to do this for more than two days. At the same time, before eating, it is recommended to let the freshly squeezed beet juice sit for about 40 minutes and only then drink it. Fresh juice should be stored in the refrigerator in a tightly closed glass bottle or jar, without access to oxygen. But it’s better not to prepare a lot of the drink for future use, but to drink it exclusively fresh.

Celandine

This unique plant is famous for its medicinal juice. But celandine juice is not used as food, but for external use in the treatment of dermatological diseases. The juice of this plant requires a special approach to preparation and storage. The jars with the workpiece must be fermented and after that you can store it for 1-2 years in a cool place, for example, in a cellar.

Burdock

Burdock has long been known as an antiseptic and anti-inflammatory agent. How to store burdock juice depends on its processing. Uncanned and freshly squeezed can be kept exclusively in the refrigerator for no more than three days. Otherwise, it will not only lose its beneficial properties, but may also cause harm to the body. Preserved pomace will last from 8 to 12 months, depending on the preservative.

Birch

In the spring, birch sap is actively released and the season for its extraction and harvesting begins. How to store birch sap? By analogy with the previous product, birch drink should not be stored fresh for more than three days. In this case, storage should be carried out strictly in the refrigerator and in glass hermetically sealed jars. To extend the shelf life it is necessary to preserve it. All of the above tips and recommendations for storing juice apply specifically to freshly squeezed and freshly prepared products. Preservation will help extend the shelf life of each of them, but after it it will be a completely different drink with a different composition and properties.

That's why it needs to be filtered. You can use gauze, bandage or cotton as a filter.

There is no need to boil the strained juice. It will be enough to warm it up to eighty degrees. And now you can pour it into jars. Add sugar while heating. Before sealing the jars, they must be sterilized already filled.

Juice without pulp is considered one of the most popular among fans of this drink.

Shelf life

Long-term storage spoils the quality of the product: the percentage of vitamins and minerals decreases, the taste and color may change. Nutritionists recommend drinking 0.25 fresh juice per day three times a day and more than a glass of liquid at a time - do not cook. Sometimes the squeezed concentrate can be diluted with clean water. There is no point in consuming more than the specified volume - they will not bring any additional effect. The rest can be drunk later, although some of the benefits will be lost.

Juices have different shelf life. It is best to drink them within 10-15 minutes after preparation; you can leave them in the refrigerator for several hours. But the products will not remain in their original form, for example, apple juice will darken because it contains a lot of iron, which oxidizes under the influence of oxygen. If you pour it into a glass bottle and close it tightly, it will last for several hours, but you will need to keep it in the refrigerator. To prevent apple juice from becoming too dark, you can add a few drops of lemon or ascorbic acid to it.

It is better to drink carrot juice right away. But if you made a lot at once, then sealed in a bottle it will last for a maximum of two days, provided it is stored in the cold and in the dark. Cabbage juice is not stored at all - you need to drink it immediately, but it is recommended to keep beet juice for 40 minutes, and use it only infused and diluted; you can store it in the refrigerator for no more than two days.

Grape, raspberry, peach, strawberry and other juices containing a lot of sugar will quickly ferment, especially if left in a warm place. Drinks will last no more than a day in the refrigerator, like apple drinks, they will lose their appearance and taste. The shelf life of sweet juices can be increased by adding 10-15 drops of lemon per 0.5 liter of liquid to a freshly squeezed vegetable or fruit drink. The acid will serve as an additional preservative.

Freshly squeezed citrus juices (lemon, grapefruit, orange, tangerine) containing a lot of acids can be stored longer, but they will contain much less vitamins and minerals in a couple of days. The same applies to cherries, pomegranates, and currants.

Apple juice through a juicer for the winter

To make delicious apple juice, you can also use a juicer. The use of this device will speed up the process of making a fruit drink by an order of magnitude. Please note that in this recipe the quantities of ingredients are described for a six-liter juice cooker.

Components:

  • Apples – 5 kilograms;
  • Sugar – 3 tablespoons;
  • Water – 4 liters.

Cut the washed fruit into quarters, be sure to cut out the seed pod. Place the pieces in a pressure cooker colander and sprinkle with granulated sugar. Pour water into the lower container and boil. Place a juicer container over the pan of water, which is designed to collect the leaking juice. And also a saucepan with apples. Close the device tightly.

After all this has boiled for about half an hour, loosen the “grip” of the clamp on the tube and drain the first portion of juice. It should be about a glass. The first drink is not sterile, so it must be poured back into the container with the pulp to boil again.

Meanwhile, the fruits were steaming. The pieces shrank due to the fact that they gave up some of their juice. At this moment, the intensity of the fire must be reduced. Apple juice should be cooked through a juicer for the winter for another forty minutes. The deadline is one hour.

It's time to turn off the juicer. Now you need to leave it alone for another twenty minutes to let the juice drain. Afterwards you need to remove the clamp from the tube and drain the existing drink. The residues are drained through the wall of the liquid collector. Pour the drink into sterilized jars or glass bottles. That's all that needed to be done.

In general, the complete process of making apple juice through a pressure cooker for the winter takes about an hour and a half. Ultimately, from the amount of ingredients indicated in the list, an average of three liters of drink is obtained. But in general, cooking time may depend on the type of fruit. If the apples have turned into puree, then the device can be turned off.
